Enameled cast iron is a remarkable and robust material that performs well with modern requirements for food preparation and cooking. Whether you choose to stir-fry, slow-cook a casserole, sear a steak or bake a cake, there is a shape that is suitable. Cast iron performs well for either slow cooking or high-temperature searing.

Cast iron can be used reliably on any heat source, including induction, and with any oven or grill. It has the ability to retain heat efficiently, which allows for use of lower heat settings in stovetop and oven cooking. On the table, a hot covered dish will keep food hot for second servings.

Cast iron can also be used to keep foods cold. A chilled dish becomes an ideal cold food server on a hot summer day. It can also be placed in the freezer for food storage or advanced food preparation

High heat temperatures should only be used for boiling water for vegetables or pasta, or for reducing the consistency of stocks or sauces. High heats should never be used to preheat a pan before lowering the heat for cooking. Cast iron retains heat so efficiently that overheating will cause food to burn or stick.

The vitreous enamel surface is impermeable and therefore ideal for raw or cooked food storage, and for marinating with acidic ingredients such as wine.

I've collected a few Le Creuset pans in various sizes and colors.
The 2 quart french oven that I've had for years is used the most and I wanted another pan that was larger but not as large as my soup pot.
This one filled the bill perfectly. It has a flat bottom making it easier to use for roasting or browning than my soup pot. The sides are high enough to use it for stews, soups, rice or frying and I really like the Linen color.
The handles on this pot are larger than my older french oven so it's easier to get a good grip.
All in all, it's a very versatile size and shape. I expect to depend on it for many years.

I own the Le Creuset Wide Dutch Oven in two sizes -- the 6-3/4 qt and the 3-1/2 qt featured here. Although I really love the larger pot for creating large batches of soup in the winter, I have to say I am surprised by how much I grab this small dutch oven on a weekly basis. It's small size means that it's lightweight, comparatively speaking - making it easy to heft in & out of the sink for a quick cleanup, which is ridiculously easy, by the way. A quick swipe with some hot water and a little dish soap, and it looks brand new. The shape is conducive to braising, sautéing - just about anything, really. Great for spaghetti sauce. I've brought it to the table as casserole dish for 4-6 servings. The fact that it's cast iron means it retains heat and the food stays warmer longer out of the oven. Add to this that it's beautiful, and you have a perfect pot! Considering the price of most Le Creuset pieces, this one's a steal at $149. I may need another color.

If you're wondering whether this oven is worth the price, the short answer is yes. There is not another dutch oven out there that cooks food as perfectly as this one does and it is constructed to last. It's a magnificent piece of cookware. This is a smaller size so it's more appropriate for weeknight meals and/or meals that feed 1 or 2 people. It's also good for boiling pasta due to its width.

The best pans for braising meals under low heat and for making different soup. A few tips I learned while using them:
1- put the oil or butter before you turn the heat on. This makes the food less likely to stick or stain the enamel. In non-enameled pots, one should do the opposite and wait till the pan is hot.
2. Start at low heat for several minutes before tuning to medium. This is more crucial if you use electric heat and the eye of the stove is much smaller than the bottom of the pot. Again this will prevent sticking.
3. Only put the heat on high if there is a lot of liquid in the pot, such as soup. You shouldn't exceed medium heat in most circumstances.
4.Apply oil and rub it with a papr towel after each meal. You will read in the instructions that it's not essential, but I found that it helps the food not to stick.
5.Never use metal implements in enameled pots. You shoul use wooden ones.
6. Stains at the bottom are normal with use. You can ignore them, but if you are fussy you can can rub the out by boiling some water in the pot for a couple of minutes. Don't do it any other way or you risk ruining the enamel.
7 let the food set for 15 minutes or so after it's cooked. It will taste best if you do.
8.be careful not to drop the pot on the floor, it will break. Such is the nature of cast iron.
I hope these tips are useful. It took me a few years to figure them out, but they'll make your cooking life easier and with less frustration. Good luck.

I've always wanted a Le Creuset dish, but they are both expensive and heavy and that held me back. I was reading lots of recipes that needed a dutch oven - something that can go on top of the stove as well as within the oven, with a good sealed lid, and decided to give myself a Christmas present I really wanted. So we got it. We've already used it twice, it works just as well as I expected and it cleans like a dream. This is the mid sized one, the big one really would be too heavy for me, but this, although by no means light, is manageable, and can easily hold a meal for 4 people (though probably not 8) I ordered the red, and it's cheerful color looks great on my stove even when not in use.

After drooling over this new color for months..I found it at a great price on Amazon. It is my fourth Le Creuset..(have since sold the soup pot on ebay as it was to small for me).This pot is a perfect size for a nice dinner for two or three or maybe four..can do a small roast,chops or whatever. I LOVE the shape,flat bottom, straight sides..makes it much easier to cook over my old soup pot. easy to use and clean..makes anything you cook in it come out wonderful..a must for any good cook..if this size is to small you can step up a bit to the 4 1/2 quart..which i may have to add anyway...overall its a must buy and LOVE the color!!!
