"This praiseworthy title offers simple, quick, reduced-calorie versions of everyday favorites. Calorie-conscious cooking need not detract from the pleasure of eating."

Publishers Weekly

"A fabulous cookbook. The recipes provide great-tasting food with a reasonable calorie content. My wife and I use it all the time."

— Theodore M. Brennan, owner of Brennan's Restaurant, New Orleans

With this addition to the bestselling Lean and Luscious series, authors Bobbie Hinman and Millie Snyder prove that you don't have to sacrifice taste and texture by avoiding meat products. • Easy-to-prepare recipes
• Meatless versions of traditional American foods
• Recipes from all corners of the world

Editorial Reviews

From Publishers Weekly

Hinman and Snyder's ( More Lean and Luscious ) third excursion into reduced-fat cooking explores vegetarian fare. Most of the dishes are mildly seasoned, even those inspired by spicy cuisines, like cauliflower curry and tofu fajitas; veteran vegetarians may find a number of the recipes bland. However, the collection offers an abundance of entrees, side dishes, condiments and desserts that are healthful as well as easy and inexpensive to prepare. Some, like linguine with tomatoes and "cream" (made with evaporated skim milk), can be whipped up in short order, while others, like beans and vegetables bourguignonne, reheat well, making them ideal for everyday meals. Even cooks who like to spice up their act will find plenty of sound ideas to work with. Although this isn't a diet book, each recipe is accompanied by mostly straightforward nutritional data; however, the authors use the confusing term "additional calories" (clarified only in the introduction) primarily to indicate empty calories contributed by ingredients like sugar. Thus one serving of apricot fruit and nut bread contains 223 calories with 50 "additional calories" for a total of 223 calories.

5.0 out of 5 stars Fantastic cookbook, August 30, 2001
By A Customer
This review is from: Lean and Luscious and Meatless (Lean and Luscious Series) (Plastic Comb)
originally purchased this cookbook for the nutritional breakdown that is listed @ bottom of every recipe, I was watching my protein level due to some disturbing numbers from medical tests,I
found that I liked every recipe I tried they all tasted really good, a few of them were a little bland but simply by slightly increasing the spices that they called for took care of that. Not only were the recipes good but my cholesteral improved from 256 to 172, blood sugar greatly improved, I've lost weight as long as I stay with it, and too much protein situation improved to the point of seeing the specialist every 6 months instead of every 6 weeks. I feel much better eating this way, a big thanks to the author.

5.0 out of 5 stars Every recipe a gem, July 25, 1997
By A Customer
Of all my vegetarian cookbooks, this is the one that I turn to again and again. It's comprehensive--includes everything from appetizers to desserts--and I have yet to come across a recipe in this volume that fails to live up to its promise. While not a strictly vegan cookbook, the author always suggests substitutes for non-vegan ingredients. A personal favorite is the "Mexican Lentil Casserole"--guaranteed to win over die-hard lentil resisters

5.0 out of 5 stars Excellent, March 30, 2003
My sister gave me this book years ago. Not being into cooking at the time, I didn't even open it until recently. I've discovered a new hobby and a new joy---cooking! For a total novice like me, the authors make it simple and easy. Their recipes are excellent...full of flavor, using spices well, tasty but low fat. I am especially enjoying their section on grains and am having an adventure experimenting with millet, kasha, and brown rice. I would imagine that more experienced cooks too would like this book; there are some recipes that look more complex. But the 9-10 ones that I've tried have been quick and easy for a beginner. If you want healthy, vegetarian food that tastes great and doesn't require you to be a gormet chef, get this book!
