How can you not love a book that practically devotes a whole chapter to dehen, or rendered lamb fat? This book is different from most Middle Eastern cookbooks, and focuses closely on one area and culture. Many of the recipes are unusual, surprisingly easy, and authentic. It provides a window on Lebanese (Druze?) culture in both the U.S. and the old country. The recipe for chicken with sumac in this book, may be for the limited time, effort and money required to put it together, one of the world's greatest dishes, and it deserves to be better known.

This is one of my favorite cookbooks and has been since it was first published. I am delighted to see it is still available. It is one of two or three cookbooks that I have used consistently for over a decade. It is lovely to read, lovely to look at, but most important, lovely to cook out of. It makes a wonderful gift, which is why I was searching Amazon for it.

When they say this is the definitive Lebanese cookbook, they mean it! I have owned this book since the paperback came out in 1995 and the recipes are very much like my Lebanese father makes them. Most other middle eastern cookbooks do not taste like my families cooking from within the Christian culture - but this one nails it.

The book has nice stories and descriptions of the how's, why's and when's for some recipes. It is a pleasure to read and to cook from. I've made many recipes in this book and they all turn out delicious. They are easy to prepare but be warned that much Lebanese cooking is very time consuming. It has every recipe I can think of and many I've never heard of.

My father was so impressed with this book, he bought it and used it and then gave it to a friend because he thought the recipes were genuine Lebanese recipes. Now I'm buying another copy for my father because he's forgotten how to make pita bread from memory I'm sure the recipe for pita in this book will get him going again.
