Carries on the high standard of Leiths cookery bibles. Lots of information on techniques of baking and information on the ingredients. I especially liked the sections showing why things had gone wrong if the results weren't correct. The recipes cover basics and also American recipes. One of my favorite cook books.

I was offered this book and I didn't know what to expect of it. It is a really thick and heavy book and as with all the recipe books I have that are really thick it scared me. I thought it was too much information, too many recipes. I was so wrong! When I started to open it and really reading it thoroughly I found out that it is "just" the best baking book of all times! No wonder they called it a bible! It has everything you need to know, not only the recipes but all the basic and not so basic information on how to create everything from pies, to bread, to icings... The more I read this book the more I find it amazing. I believe this is the perfect book for all who love baking in general, especially if you have no education in cooking it's a great place to start. I am really grateful to the person that offered it to me.
