Got the machine last week. The first time I used it I made two batches and then last night made 6. The machine freezes very fast, twenty minutes seems typical. Some small batches with the bowl pre-chilled around 10. Made a batch of frozen daiquiri, which took a bit longer. I am very happy with the time to freeze.

Also the ice cream and sorbets are very smooth. With recipies as simple as blended fruit and a little syrup (Raw Agave) the ice crystals are very fine and the texture smoother than many other sorbets I have made. The machine has enough torque to freeze these very solid, which greatly helps with keeping them spoonable after storing overnight in the freezer.

As for the cleaning some people have complained that the unit is tough to clean because the bowl is not removable. I have not had any problems and can clean it in a couple of minutes. It is easiest if you let it warm up for five or ten minutes before hand but a wet kitchen towel (warm) or some papertowels wipe it clean in two or three passes. The integrated bowl has no seams or crevices so it wipes out easily. As an engineer this really seems like a superior design even if it is not something that can be thrown into the dishwasher. The only trick to cleaning is to use a larger towel that doesn't need rinsed as often as a sponge, which was a bit tedious. I have had no problem turning it around for a second batch in less than five minutes.

The only problem I had was the first unit I received would not cool. I suspect it was shipping related and Amazon returns had a new unit on my doorstep within 48 hours and offered to reimburse for the return shipping on the defective unit.

A simply outstanding piece of equipment. Above all else is the texture of any ice cream, sorbet, gelato, etc. It is instantly ready to scoop or quenelle after 20minutes and being able to turn off the chill button at anytime allows one to remove all of the product smoothly, not like the bowls you chill in the freezer and lose 1/4 of your product to over freeze. I can't believe they could even ask $50 for one of those rotating things. This machine is a professional chefs dream come true and best of all, even if the ice cream hardens up too much overnight, you always have the option to thaw them all out the night before and re-spin them before service (in the restaurant) yielding a perfect and I mean perfect result. I have very high standards for what an ice cream or sorbet must meet and this machine is excellent...namely due to the self cooling and the thick metal paddle that really aerates the mixture when you need it most near the end of the cycle. In hindsight, I kick myself for waiting so long to get this and I am going to take my old ice cream machine and go all "Fax machine from Office Space" on it. Any chef requiring refined product without going all out for a $4000 Pacojet, trust me, get this. but delivery was a touch of an issue as I live in Canada.

I upgraded my Musso Lussino to the Pola, and I am not disappointed by any means, but not thrilled like I was with my Lussino. It really doesn't seem to make a batch of ice cream any faster than the Lussino (although it's supposed to), and the capacity is only a bit greater. It's quite a bit heavier than the Lussino, and not as attractive. I have to say that the Lussino is a better value. If you are willing to part with the money for this machine, however, and you have never used its little brother, I am confident that YOU will be absolutely thrilled with it.
And if you're going to get this machine, don't forget to order some reading to go along with it. I strongly recommend the CIA book, "Frozen Desserts" (http://www.amazon.com/gp/product/0470118660/ref=wms_ohs_product?ie=UTF8&psc=1). You'll get a wealth of recipes, but also a lot of good information about the right way to formulate recipes so that you end up with a proper ice cream or sorbet. Like baking, you can't willy-nilly throw some crap together and expect to produce a result with the best texture and a logevity of more than a couple hours in the freezer. One of the most important topics are stabilizers. These range from powdered milk and gelatin to more "exotic" things like guar gum or xanthan gum. Thost might sound scary, but they're natural plant extracts and they're easily found right here on Amazon. They will prevent your ice cream and sorbet from crystalizing in the freezer. The book will help you with some suggestions, but you can also order a commercial stabilizer like Cremodan (Not cheap, but a little goes a very long way!) which is an optimal blend of the aforementioned stabilizers. At any rate, with a little education, you'll be using the book's formulas to make sorbets from any fruit under the sun and have it turn out well *every* time. Don't take chances with Internet recipes. It's not worth it.

Product is a fast, effective way of cranking out a lot of ice cream. My issue was one of time (lack of) so I wanted a product that could quickly accomplish this while entertaining, etc.
Pro: Gets ice cream and sorbet's on your plate in 20 mins. Up to 6 quarts an hour.
Cons: Big unit and the bowl is non-removable so clean up is a mild pain.
Conclusion, if you love ice cream and have some extra money, it's a good buy.
