The Lemon Springerle Easter Bunny Cookie from Embossed Edibles shows an Easter bunny walking with a basket of colored eggs over his shoulder and the sack he is carrying is full of colored eggs. The cookie measures 7 in. x 3 1/2 in., comes in a nest of green, yellow or pink edible Easter grass and is packaged in a platinum gift tin with satin ribbon and an embossed seal. When you place your order, this cookie is created using a Springerle mold and then baked and hand-decorated. Springerle cookies have a unique rich lemon cake-like texture inside with a crispy outside. Springerle molds and recipes used for baking cookies come from a very old European tradition.
