Directions
Lentils do not require soaking. Simmer 1 cup lentils with 4 cups water 12 minutes for salads, 15 to 20 minutes for main dishes. Skim the water while cooking. One cup dry yields 2 cups cooked.

Of all the lentils, my favorite are the red. I like their taste, their texture & how quickly they cook, compared with other lentils. We use them so often in our Indian Cooking that we decided to buy in bulk. Yay for Amazon because our local health food store stopped carrying any bulk!
