keeps the taste but gets rid of the fat,

Most of the recipes are very flavorful yet low in fat. Disney even has a vegetarian section that has some very good recipes. The only fault I can find with the book is that most recipes have lots of ingredients.

I took a cooking class from Disney when I lived in the Hyde Park neighborhood of Chicago. Not only are the recipes in this cookbook simple, the rest of the family and guests will enjoy the food. Additionally, Disney gives great advice on planning meals for an entire week. His recommendation is to do all the shopping and prep work in advance, freezing some items for later in the week, marinating other items for use mid-week, and eating the most perishable foods (like fish) on the prep day.
The book is upbeat and helps you eat low-fat. It has good advice on how to save money and time while still eating well. The author is a bit campy at times, but not overdone.
