I used to use the "Adolph's" brand salt-free meat tenderizer, but then they stopped making it. I was looking for a while and finally stumbled on this. I use it as an additive to brines and it tenderizes the meat very well. You have to be careful with it though - a little goes a long way. Perhaps a half teaspoon per quart of brine. I would not sprinkle it directly on meat unless I wanted it to completely fall apart and turn into a disturbingly mushy meatlike puddle.
