I have used a Big Chief for years and decided to leave it at my girlfriends house and pick up a Little Chief. I like the smaller size and also the front loading. I never filled the big chief or even came close so I was heating lots of air. The Little Chief shares its big brothers ability to make some absolutely terrific smoked foods. Chicken and steak smoked and then grilled are awesome. Smoked salmon is my favorite. Very easy, I never mess with brine unless I am smoking bacon or making some sausage. I have used much more expensive smokers and while they are nice they don't make food taste one bit better. This unit would get five stars except it is not as well built as the Big Chief. The metal seems thinner and the racks are kind of flimsy. Would still recommend without hesitation. Also make great gifts. We have given several and they gets lots of use and compliments.

My father smokes food and bought me a Little Chief for Christmas. I have used it a few times now and it's been a success and a big hit with the new family.

I suggest reading the booklet that comes with the smokehouse completely before operating the smokehouse. Follow the instructions and you shouldn't have any issues.

Smoking food just to impart a smokey flavor is very simple. The booklet comes with recipes and instructions on how to do this, so you don't have to do a trial-by-error. There are also instructions on how to fully cook foods too, but I haven't been able to try this yet. I imagine there won't be any problems with that, either. The temperature of the smoker is affected by the environment it's in, so if it's gusty outside, it's going to change the inside temperature. It's a small aluminum box, not a walk-in sauna.

Presently, the "cold smoke" technique described in the booklet is only for the old style smoker, which is a top loading unit. The newer version is a front loader, which makes the racks easy to slide in and out, but I'm not sure how to fix it up to do a cold smoke. Hopefully I'll get a reply from their website about that. In the meantime, I can still smoke things that won't melt, like nuts and meats. (Update: Their customer service rep informed me that all that needs to be done is to prop the door open on the ground about 2 inches in front of the unit, with the top of the door leaning against the opening. I have used this method for cold smoking plenty of times and it works fine. You can prop the door open more depending on how cool the inside needs to be.)

My new family will raise a pig to take to the butcher, and when he makes bacon, it lacks some flavor, so we put it in the smoker with a pan of hickory for about 20-30 minutes before cooking it on the stove and it's delicious! Also, try soaking sunflower seeds in tamari sauce and then smoking them with alderwood. MMmmm!

I grew up in Oregon and everyone used the Little (or Big) Chief smoker. Mostly for smoking Salmon, but also for venison, etc.

I've had mine for over a year and have experimented with the jerky recipe for many batches. I've found that it comes out too salty if you use 1/2 cup salt. I'm down to 1/4 cup and it's just perfect.

As far as quality goes, I've been very happy with it. It heats up fast, smokes well (be sure to rotate racks) and
I would buy the same model again.

I've ordered supplies from Luhr Jensen and my experience with their customer service, and shipping, has been great!
