The space-efficient square shape allows you to grill more food at one time than you would with a round pan. Cast iron, although heavy, is a perfect material for grilling, and this pan is good. Grilling is usually done with high heat; after all, you want to simulate outdoor cooking. You think that since you want to grill and not steam, a lid might not be necessary. But I...

I received my grill pan for Christmas (per request). It is excellent! I use it both stovetop as well as in the oven.

For stovetop applications: I put the pan into the cold oven and preheat it to 500 degrees (try THAT with AllClad). When fully pre-heated I transfer the pan to a large pre-heated stovetop burner set to just under 'high' and place the food in it. Depending upon what I am cooking, I will either do the remaining cooking entirely on the stovetop, or sear the food stovetop, cut the oven temperature back to 350 - 375, and let it finish in the oven (great way to prepare fish - quick searing on each side on stovetop, then into the oven for a few minutes to finish).

For steaks, etc. Turning over 3 times instead of once with a one quarter rotation on the second turn provides the nice diamond grill marks.

For baking applications:
For items like 'oven fried' breaded pork chops or breaded, skinless chicken, I simply use it as a baking pan. The grill bottom allows dry air to circulate under the food and suspends the food above any rendered fat/juices which would make the breading soggy (and absorb/retain fat). I put the food into the pan following preheating to the baking temperature in the oven. Note: The baking temperatures for these items (350 - 375) aren't high enough to produce dark grill marks - but that's not the application here.

I chose the square versus round version of the grill pan because things seem to fit more easily in a square pan - my opinion.

As for the need for a lid - spare me. Dry, high heat is what grilling is all about - the searing heat seals in the moisture and everything comes out nice and juicy. The trick is simply to make sure the pan is, and stays hot enough. Cast iron takes very high temperatures right in stride and it's unbeatable for even heat distribution and heat retention.

This pan is the third Lodge cast iron item that I have purchased and I am equally pleased with each of them.

It's cast iron, so you can run this pan as hot as you dare to sear the flavor in. Makes excellent burgers, with nice grill marks but no burned spots, even done all the way through. Try that with a George Foreman and your burger will be black outside and dryer than the Mojave Desert inside.

The square pan provides plenty of room to fry up a few burgers and the hot juices in the bottom are made-to-order for sauteeing a few mushrooms, onions, or peppers to go on top. The handle is fatter than older Lodge designs and quite ergonomic as long as you're wearing an oven mitt. Cleans nicely by boiling a little water in the pan and giving it a quick scrub with a stiff round natural-bristle vegetable brush.

ONE MINOR DETAIL - I own the pre-seasoned Lodge Logic version of this pan, which is not currently offered by Amazon. You'll have to season this pan yourself, and I can't vouch for whether it will work as well as the pre-seasoned version.

This would probably be it. although I would really lament not having my french press, too.

I love, love, love my grill pan. it really does a great job at searing in moisture, making everything I've cooked on it so good.

it's a little rough to clean, yet. you can't exactly throw it in the dishwasher. I am finding, as it seasons more and more, it gets easier to clean.

I do find that as I use this, my efforts at searing cloud the whole kitchen with smoke, but I suspect this is entirely a reflection on my cooking abilities, and not, in fact, the spendid grill pan.

if you have a family, you're going to want/need two or more of these. it's big, but not big enough to manage more than a couple of breasts/steaks, etc.

and try "grilling" corn on this baby sometime. yeah. it's pretty tasty.

Received my cast iron grill pan and used it right away on my steak. It was great!... I seared the steak first then put the them in the oven . It tasted like it really came out of my outdoor grill. This will be great especially on times when my husband will not want to barbeque outdoor.

Pros: The square shape of this pan can accomodate 4 medium sized chicken breasts or 2 decent sized steaks. The high sides help prevent the cooking from splattering all over the stovetop. The tall grill ridges provide good sear marks and let the grease accumulate on the bottom. That grease continues to cook under AND away from the meat giving it a hint of smoke that is as close as you can get to a charcoal grill. Clean up is easy: when cool, use a stiff brush and plain hotwater, then reheat on the grill and wipe down w/ papertowel soaked in oil.

Cons: You will still need to season it a little. It will smoke when you try to grill on it the first 10 X or so. It is ugly and heavy.

Tips on seasoning: the oven method works fine, but the best (and quickest) way to season this grill pan is to fill it partway w/ cooking oil and deep fry something like you would in a skillet. The sides are high enough and after a few times, your grill pan will be seasoned.

If you want a grill pan that gives great flavour get this one. If you don't want the flavour get the other ones on the market. If you care about splattering, get this one, if you don't get the flat grills.

I've been fighting with my grill pan since I got it. Everything sticks and it's a bear to clean. I think I'll try your recommendation and if it works for me, maybe I'll get that large grill/ griddle pan I've been wanting. Thanks again.

A cast iron grill is a must for every home cook! Heat it up, throw on fish / meat / veggies and you have a delicious healthy meal without the bother of outdoor grills. You get a great sear / crust / grill marks on the outside of your food, and inside it is just juicy - cheaper than the George Foreman, but the food is so much better! I got this in my gold box for $10, and I use it almost every day. Seasoning the pan is not hard - it keeps it with a great non-stick finish and only needs to be done once a year. Great product!

This pan has allowed me to make a variety of both grilled meats and vegetables both look and taste wonderful. It holds heat evenly and allows me to look like a star cook to my family. With a good seasoning, this pan will last you for years and years and years.

Grilling is usually done with high heat; after all, you want to simulate outdoor cooking. You think that since you want to grill and not steam, a lid might not be necessary. But I have found that I want a lid sometimes - if only to use for thirty seconds. For that simple reason I would advise anyone interested in grilling to buy a pan that comes with a lid.

The grill pan is wonderful except it needs a lid to keep in the flavor and to speed up the cooking process. My husband accidentally put the grill pan in the dishwasher and when I removed it; it had rust all over it. I had to throw it out. Never make this mistake!
