Anne Willan is an expert cook. Her recipes give you unusually good results. Example:this book contains a recipe for a rice salad with asparagus and cold smoked salmon. It is outstanding. What makes the recipe unusual is that Willan shows you how to cook the rice with lemon juice and flavor it with a delicate tarragon/dijon vinegarette. This elevates the entire dish to something truly unusual and gourmet. I have served it for company to rave reviews several times.
