About the Author

Charity Wilson is the loving mother of four children, well five if you count her husband of over 25 years. She has worked in various jobs over the years but realized one day home is where she needed to be. After a lot of deliberation and research, she decided to become a full-time writer. Being a full time at home mom and writer sounds like a lot of work and for good reason, it is. She loves every minute of the organized chaos that is her daily life. It is what fuels her ideas and inspires her to write the books she does. She loves to share what she knows and is always willing to learn something new. She loves to cook and create new recipes which you will find shared throughout her various cookbooks. She stays up to date on the most current diets but doesn’t particularly follow any one of them. She eats to enjoy while consciously watching her health. She knows people need a variety of recipes to avoid the boredom that leads to weight gain and tries to fill that void. Her passions don’t stop at cooking and she is an avid gardener, organizer and loves reading. She is known amongst the kids in the sports community as “the lady with the best chocolate chip cookies ever.” She enjoys being able to watch her children play sports and is quite active herself. In the end, you could call her a homebody. Charity is all about living life with passion and enjoying every moment. Life is about enjoying good food, great company and waking up every day happy to do it all over again.

Charity is a genuine home body. She loves to stay in the kitchen and cook while keeping a clean and organized home. She also loves writing about the recipes she comes up with trying to please the palates of her family. They have had to endure the failures so you don't have too.

She plans on continuing to release more recipes books and anything related to making fellow stay at home mom's lives easier. If you think she is an Ellen DeGeneres watching couch potato think again. O.K. admittedly Ellen is the one person she makes T.V. time for but that is it.

She has 4 beautiful kids and a husband who works out of the home. To say everyone is in each other's business is an understatement but they love every minute of it. She enjoys making healthy snacks that are ready for her kids when they come home after a day at school. She gets to hear firsthand how their day went and cherishes that time.

She ensures meal times are healthy but there is always room for having a great tasting no holds barred meal at least a couple times a week. That is what makes living so much fun.

She is as real life as it gets experiencing the same daily time crunches and chaos any family does. Her focus is on raising her family and authoring books people enjoy and can apply to their lives to make them easier.

She loves the life she lives and hopes you do too.

I went to the doctor recently, and he said, I needed to lose weight. After much research,I decided that a low carb diet was worth a try. Picking up this book helped me start my low carb diet journey! This book has 50 great recipes that actually taste good! My personal favorite is the Orange Chicken Supreme. If you are thinking about starting a low carb diet, this book is an excellent starting point.

It's easy to get in a rut by eating the same things over and over again. I am always looking for new recipes for the low-carb lifestyle. This book has a nice variety of recipes that are easy to make and enjoy. I'm only giving it 4 stars instead of 5 because it did not include carb or calorie counts. Even though these would be estimates by the author, based on the ingredients she used, I still feel that it should be added for the reader 's convenience. When I'm flipping through a recipe book, I want to see the carb and calorie counts so that I can make my choices quickly. I still do recommend this book to anyone looking for simple, tasty, low-carb food!
