Used this cookbook since 1992. Terrific recipes! Great flavor and simple preparation. The easiest and tastiest way to low cholesterol cooking. Hopefully they will reprint soon!

I have had this book for some years, and use it often. I bought another for my step-son for Christmas and he enjoys it also. Since getting the book I mostly cook with Olive OIl. Recipes are easy to follow- which is what I look for.

This book is a collection of recipes that celebrate olive oil, particularly its health-promoting qualities. Schlesinger and Earnest have become advocates for heart healthy diets after heart disease touched their lives. The book includes a preface by nutritionist Dr. Scott Grundy and introductory essay on dietary fats and the processing of olive oil. These are followed by recipes featuring olive oil, including appetizers, soups, salads, poultry, seafood, meat, vegetables, grains, microwave dishes, grilled dishes, sauces, breads and desserts. A nutrient analysis is included with each recipe, along with yield and estimated preparation time. End material includes a short bibliography on dietary fats and the Mediterranean diet and an index.

The short essays at the beginning of the book on dietary fats and cholesterol are extremely well-written, with very clear descriptions of the differences between total cholesterol, HDL, LDL, and triglycerides, and the different effects that specific foods or types of dietary fats have on body chemistry. The recipes are straightforward and healthy as well as appetizing.
