Can't even tell the recipes are low-fat, August 30, 2010

I picked this book up at a garage sale about a month ago and I just can't believe how much I like using it. It has nutritional information about every recipe. The print is easy to read, even from my cookbook holder on the kitchen counter, as I am cooking.
The book follows the standards that conform to the American Heart Association with regard to requirements for fat intake (30%). It has four special features that deal with recipe makeovers, lowfat menus, lowfat dressings, and breakfast dishes. The contents include recipes for appetizers, soups, salads, meats, poultry, seafood, vegetarian, side dishes, breads and desserts. Each chapter is starts and ends with a color picture of items from the chapters.
My favorites so far have been: the potato salad with seed vinaigrette. The Chicken Vermicelli Carbonara was delicious as well. I cannot say enough good things about the Green and Red Lasagne, a vegetarian lasagne. It was so good I made it two weekends in a row! Barley, Lentil and Eggplant Casserole, the Garlic-braised Eggplant & White Beans, and Garbanzo Curry were all wonderful vegetarian meals that kept me satisfied and happy. You can get a nice used copy of this book so cheaply here at Amazon, you'll be glad you picked it up.
