For more precise slicing than a food processor can deliver, a mandoline is the kitchen tool of choice. This professional-level mandoline has two hinged legs that open up to support the mandoline in a slide-like position and a non-skid coating on the legs keeps the slicer stable on any surface. Using the five spikes and numerous other pointed grips on the underside of the black plastic food pusher, you can get a firm hold on any fruit or vegetable for slicing. Sliding the pusher up and down along the mandolines stainless-steel gliding track with even pressure on its handle begins the slicing process. This mandoline comes with five high-carbon stainless-steel blade attachments neatly packed in a plastic storage box. Blades easily slide into place from the side of the mandoline and lock securely to prevent shifting during slicing. The attachments include a smooth blade for producing even slices of potatoes, lemons, or radishes; a fluted blade for making crinkle-cut carrots or cucumbers or waffle-cut potatoes; and three additional julienne blade attachments in 4-, 6-, and 10-millimeter widths for cutting potatoes for French fries or making skinnier strips of carrot or shiitake mushroom. Two tightening knobs on the upper half of the mandoline adjust the blade up or down for thicker or thinner cuts, respectively. The mandoline blade requires regular maintenance with a sharpening steel or stone to keep its edge sharp. The manufacturer recommends that you wash the blade by hand to preserve its edge, but the rest of the mandoline can be cleaned in the dishwasher.
