Product Description

The secret to deep-fat frying lies in preheating the oil to the proper temperature before adding the food and for this, a thermometer is essential. This MIU FRANCE #90049 Candy/Deep Frying thermometer meets the criteria for a deep-fat thermometer which are clear markings measure from 100F to 400F. It is 12 1/2" long. It has a stainless-steel frame and is sturdy and features a metal clip that will hold the thermometer safely to the side of your pan. Also, it works well for candymaking, featuring markings for thread, soft ball, hard ball, soft crack and hard crack stages.

I make a lot of candy and needed an accurate themometer. Caramels are especially sensitive to temperature changes. I regret buying this thermometer for two reasons: 1) The base/bulb of the thermometer is at a height that it often isn't fully submerged in the pot.

2) Even worse, after my last batch of caramels and the hard candy lollipops were overcooked, I realized that the thermometer is not fixed securely against the number scales, It slides up and down, thereby rendering it quite inaccurate. That was what had happened and what I thought were "perfect" temperatures, were actually about 5-10 degrees higher than they should have been. Very frustrating when you are doing something time consuming (with costly ingredients).

Unless someone can recommend a better candy thermometer, I guess I'll stick with using two (at the same time) of the store brand themometers. I DO NOT recommend this themometer. High price and seemingly sleek design do not equal quality.

does what its made for what more could ask for. It has an clip on the back so you can clip it to a pot and it wont fall in and well marked temp points starting at 100f 40c going to 400f 200c and has candy stages marked thread, hard crack, etc.it also marks deep fry at about 375 witch is a good all around fry temp.

I tried to make fudge without a thermometer but it wouldn't set. I use this one all the time to make fudge and it hasn't failed me. It's easy to use, read and it goes right into the dishwasher.
