This is the best rub I've found for pork and lamb. One of my recipes won a contest on the Made in Napa Valley website. You may still be able to find it there, but if not, try this simple crock pot meal. I think you'll agree that the rub makes the dish.
Ingredients
2 lb. pork loin roast, trimmed of all visible fat.
2 TBSP Made in Napa Valley Pork and Lamb Rub
2 lb. Claussons Sauerkraut, drained and rinsed lightly
1 Granny Smith Apple, cored and diced
1 onion, diced
2 tsp caraway seed
1/2 cup beer
Directions:
In a large bowl, mix the sauerkraut, apple, onion and caraway seed. Place 1/2 the mixture in the bottom of your crock pot and set the remainder aside. Sprinkle the rub all over the pork loin and rub it in gently. Then sear the meat on all sides in a hot frying pan, about 2 minutes per side. Place the pork in the crock pot and cover with the remainder of the mixture. Pour the beer over all.
Cook for 4 hours on high or 8 hours on low. Hint: there will be a lot of sauerkraut left over so I put 4 bratwurst on top of the mix for the last 1/2 hour of cooking. Brats and 'kraut . . . mmmmm!

I love this rub! It keeps the pork moist and tender. It has a great flavor not like anything else I've tried. When we cook for friends everyone wants to know what it is. I usually buy several tins at a time because we use it frequently and it makes a great gift! I'm getting scared because I can't seem to find it at Made in Napa Valley anymore. Amazon has been out for sometime and I am down to our last teaspoon. Pork will never be the same for us without it!!!
