This is more than a cake book. Maida is considered the Queen of Cakes, and rightly so. I can't wait to start baking the cakes in this book from Boston Cream Pie to fig cake. But there are also recipes for ice cream and sauces to go with them; gingerbreads, sweet breads (Georgia Pecan Bread; Date Nut Loaf, Dutch honey bread and scones); yeast cakes; and fruitcakes.

Detailed recipes, so if you can follow instructions you will have good results. What is nice is that while these are high end cakes, they use common ingredients. No photos, lots of stories with the recipes. I enjoy reading cookbooks, so that is a treat, if that isn't what you like it might possibly be off-putting. My faves: English madeira cake, white pepper & ginger lemon cake, Cuban coconut cake, chocolate sponge cake, cranberry upside down cake & election day cake. Contents include:

Solid recipes. This is my go-to book for old fashioned cakes that I can depend on. Maida writes in a very relatable fashion. I love her 'Cookies' book as well.

As usual, I am impressed with the details of each recipe, so typical of Maida Heatter. You can almost taste the deliciousness of each cake from each recipe. It is not for the sloppy or careless baker. Every detail counts. There's a madness to Ms. Heatter's persnicketiness. She tested each recipe, over and over again until it is fool proof and successful. She had done all the dirty work for all her books' buyers and/or her fans so we should just enjoy baking her creations. This book deserves only a 5 star rating because if you follow each recipe's details exactly, you will have a perfect final product, as if you have been a master baker all your adult life. I own all her other books, and I would not even try to be creative, I'd just be a sheep and follow all her recipes. I never had a failed product. Even though I never met her, I love Maida and her books.
