My husband I first borrowed this book from the library. We are both vegetarians (Indian) and all I could cook was Indian food. This book introduced us to different cuisines. It has a good blend of vegetarian recipes from all over the world. I have tried out many online vegetarian recipes and most of them were disasters. But each and every recipe from here is delicious. The instructions are clear and the author also gives alternate ingredients if the ones listed are not available. Also, the recipes we have tried out yet have indeed taken not more than 30 minutes to prepare. Thanks Mary :)

I borrowed this book from the library and liked so many recipes, I had to buy the book even though I had vowed to stop buying cookbooks. I have cooked and loved Mary's Spiced Red Lentils with Cabbage, Spicy Bean Hot Pot, Spiced Garbanzo Beans and Spinach, Vegetable Risotto, Vegetable Biryani (a fav), and Egg and Cauliflower Curry. But, I have not managed to complete any of them in under 30 minutes. Regardless, the recipes are tasty and worth every minute...of my time.

Checked this book out from library until they made me stop due to overuse. :) Have tried 3/4 of the recipes and every one was delicious. Some were easier than others and I generally plopped them on the table around the 40 minute mark. Ingredients were simple, directions easy to follow and the results were delicious! Photo's were nicely done as well and helped to generate interest in trying something new. A good variety of tastes and cuisines represented..thai, indian, and 'american' type stews, soups and casseroles as well as others. There's even vegetarian type dessert recipes included as well.

I've tried to cook more vegetarian meals the past 2 years but it has been a challenge because most vegetarian recipes are SO time consuming. This cookbook keeps everything so simple, easy and fast that it made "vegetarian nights" something to look forward to instead of dreading it at my house. My husband and 2 teen daughters consistently request recipes from this book when I ask them 'What do you want for dinner?'. I'd rate it 10 stars if i could! Thank you, Mary, for giving us a great tool towards fast and healthy eating!
