I remembered watching Pierre Frany on his television programs twenty plus years ago. And, I read a few of his books from the library. When I saw this advertised I had to have it.

Franey and Clayborne are "cooks" with an extensive commercial background and this video is for cooks. No gracious living exercises for housewives on an unlimited budget, no kitchen designed for the next issue of a cooking rag, and no unheard of foods from that cute little shop in the village. It really is a different world when you are cooking to make a profit!

The format can be annoying at times with both cooks injecting overdubbed instructions into the audio track. But all the information needed to prepare a dish properly is there. The ongoing comments and tips are typical of what you would learn in a commercial kitchen and presented in a dull monotone - which is actually okay.

You will need a VHS machine to watch this, of course. It is well worth the price if only to watch Frany's hands and knife work. Economy of motion at its very best!
