An all-in-one mealtime organizer, planner, and healthy, low-carb cookbook

Quick & Easy Low Carb Cooking for People with Diabetes deals with two major issues-- how to make simple, quick, healthy, lowcarb meals and how to bring variety to the table. Designed for simplicity, it is divided into three sections--Breakfast, Lunch, and Dinner--and also includes a week-at-aglance meal plan chart with selections that readers can mix and match to make a variety of menu options. Each recipe in this comprehensive planner features a shopping list, a menu, substitutions, and a countdown to get all the dishes on the table at the same time.

Sections include Breakfast: Eggs, Non Egg, Non Dairy; Lunch: Salads, Sandwiches, Soups; Dinner: Poultry, Beef, Pork, Seafood, Veal.

Recipes include:

  • Nutty Cinnamon French Toast
  • Swiss Omelette
  • Shrimp and Black- Eyed Pea Salad
  • Salsa Beef Salad
  • Neapolitan Pizza

From Booklist

Diabetics may also turn to Linda Gassenheimer's Mix 'n Match Meals in Minutes for People with Diabetes. Gassenheimer seeks to make following a limited regimen easier by restricting kitchen preparation time. She also gives advice on shopping efficiently to save even more time and energy. Breakfast, lunch, and dinner all figure into Gassenheimer's dietary recommendations. Breakfasts focus on low-carbohydrate eggs prepared as omelets with assorted savory stuffings. Dinners range widely among goulashes and Chinese, Korean, and Italian offerings. All recipes are designed to serve two, and many dishes can be frozen for future consumption. Mark Knoblauch

5.0 out of 5 stars Love this book!, July 20, 2003
By A Customer
This review is from: Mix 'n Match Meals in Minutes for People with Diabetes (Paperback)
I originally checked this book out at the library, and loved it so much I bought one for our home. Quick, easy recipes (the steak and portabello sandwich is DELICIOUS, and super quick), and allow for easy meal planning for managing the carbs for my husband's insulin pump. I would absolutely recommend!

5.0 out of 5 stars Great Cookbook for the Diabetic, November 7, 2003
This review is from: Mix 'n Match Meals in Minutes for People with Diabetes (Paperback)
While there are many cookbooks today that feature meals that are quick and easy to prepare there are very few that concentrate on the special problems of the diabetic. In "Mix 'n Match Meals in Minutes for People with Diabetes" the reader will find many breakfast, lunch, and dinner recipes with complete serving and nutritional information. Each recipe has exchanges information for those who have to watch their diet closely along with information on calories, saturated fat, cholesterol, sodium, fiber, sugars, and protein content.

Along with "One Pot Meals for People with Diabetes" this is a welcome cookbook of delicious recipes and a recommended read for anyone with diabetes or just looking for recipes with nutritional information.

5.0 out of 5 stars easy, fast, delicious, February 11, 2008

Mama & Wife (CA United States) - See all my reviews
This review is from: Mix 'n Match Meals in Minutes for People with Diabetes (Paperback)
The recipes in this book are so easy, fast, and delicious -- and full of quick helpful cooking tips -- that I'm always falling back on them rather than trying 'new' recipes in my other books. So now the recipes are getting 'old' to us! Every now and then I check back for another book of the same name/type with new recipes to try, but alas: it's not out yet. I hope they'll make another one soon. One of the best things about this book is that the recipes only use a few - in most cases 8 or fewer - ingredients, and yet are delicious and healthy. I HIGHLY recommend this book. When sticking to the portion sizes, my husband and I both lost weight without any other effort. The only down-side to this book is that the recipes are for 2 people. Now that my kids are getting older, I need recipes for more. Of course, I could always double the recipes....
