An excellent book for help in avoiding bad things for diabetics. Unfortunately the resulting salt content for most recommended foods/meals is way too high.... blood pressure issues start to come into play . Bland meals require sodium to compensate.....but try buying any prepared foods without swallowing half the dead sea.

I was recently diagnosed with Type 2 Diabetes and am in the market for a really interesting and good cookbook for people with my condition. The one I got was produced by the American Diabetes Association. Tremendous disappointment. I was looking at it last night and only found two recipes that sounded interesting.

I plan to do some research on the next cookbook I buy aimed at Diabetics. There's no reason it has to be dull and uninteresting.

This cookbook is printed in black and white, there are no pictures and the pages are a matte finish. So if you're cooking and you splatter something on them...it's there to stay. Perhaps that's how you know which recipes to make again, LOL.

I really liked that each recipe had all the nutrition information. There are calorie counts, food exchanges, fat, carb and protein grams, etc. This cookbook is just not for diabetics. It's for anyone who wants good recipes and tasty dishes. I really liked the Italian Peasant Salad. I do not have diabetes, nobody in the family does...I just like good cookbooks and making new dishes. This is one for the record book.

The Toasted Almond Chicken Salad I am making using the left-over turkey from Thanksgiving instead. The cookbook also has a month of meals, it includes breakfast, lunch and dinner. With all the recipes included and which pages they can be found. What an awesome idea, I wonder why more cookbooks don't incorporate these little extras?

The chapters are divided into breakfast, lunch, dinners and speed meals. There are no dessert recipes for the obvious reason. And I won't make broccoli now without using oil infused with saffron. That was just delicious. All the food ingredients call for fresh, bottled sauces, bottled salad dressings, dried or fresh herbs. Basically items that can be purchased at a regular grocery store. Gotta appreciate that.

You won't be disappointed in this cookbook especially if you're not a diabetic. You definitely will not find flavorless food in this cookbook. Buy!

All recipes are quite simple and surprisingly quick to make. Most meals can be made in 20 minutes or less. The best part is each recipe feeds only two people, which for us means no leftovers and that makes portion control a cinch. It doesn't matter if you are diabetic or not everything is still good.
