Made in France, these four tools embody the French attitude toward baking: delicacy, precision, ease. Made of slippery silicone, the Exopat baking mat prevents pastries from sticking, eliminating the need for parchment paper, nonstick cooking surfaces, and the greasing of baking sheets. It measures 11.6 by 17 inches, wipes clean with a sponge, is heat-safe to 580 degrees F, and can be used 2,000 times or more. Deceptively simple in appearance, the Pelton spatula is gratifyingly effective at delicate tasks such as removing soft, warm cookies from a baking sheet. Made of tough, durable Exoglass, it has an angled and sharpened edge to slip easily under baked goods, a curved handle with a thumb groove for a firm grip, and is heat-safe to 430 degrees F. The tough little 10-inch whip's handle curves perfectly into the hand, and the 10-1/4-inch pastry brush has exceptionally soft, dense bristles. The spatula and whip are dishwasher-safe.
