This saucepan is everything I expected. My use is for patination of metals in the Japanese style as per Jim Kelso's directive. The style requires the saucepan be completely copper down to the rivets in the handle. Mauviel is the only pan on [[ASIN:B001CU8Q5S Mauviel Copper 5-1/2-Inch Sugar Pan]the market suited for this purpose.

This pan is beautiful and works very well. I always feel special when I use this pan. The very thick copper bottom and sides mean it heats super evenly, and supposedly the bare copper makes better caramel (watch out, cooking regular food in an unlined copper pan like this can produce chemicals that can make you sick).

This pan is beautiful and works very well. I always feel special when I use this pan. The very thick copper bottom and sides mean it heats super evenly, and supposedly the bare copper makes better caramel (watch out, cooking regular food in an unlined copper pan like this can produce chemicals that can make you sick).

I got this very small pan since I sometimes make a small amount of caramel. However, caramel tends to expand a bubble a lot when you cook it, so the actual useful quantity you can make in this pan is probably less than one cup. I would recommend getting one of the larger ones instead.
