Buy it for your own use and plan for your grandchildren, April 13, 2010

This is the top performing saute pan for gas ranges (or woof fired, for that matter). If you have electric, do not spend your money here. If you want a rounded corner from bottom to side, this is the wrong shape pan for you.
The 2.5mm thickness of the copper is the key to performance in this pan. Copper in and of itself has little utility. All those thin copper or copper coated pans are of no additional value. When you have it this thick, you get fast and even heating. And it does not hold heat, which means better control on and off the flame. Faster to sizzle, faster to stop from overcooking or burning. The heat conducts strongly UP the sides of the pan twice the rate of even the best aluminium. You are paying for this level of performance.
As for those complaining about the handle getting hot, do not use high heat AND hold onto the bare handle. This is the kind of workhorse you slide under a fierce broiler, or finish in a 700 degre oven. You cannot do that with stay cool handles. Buy some long silicone oven mits. There are thick suede sleaves you can buy to slip on while on the stove top.
I love All-Clad and use it often. But for my best work of this kind, give me Mauviel.

Cooks great, handles are worthless, May 31, 2008

Although this pan cooks very well, the handles for both the pan and the lid conduct heat nearly as well as the pan. They both quickly became blistering hot (essentially the same temperature as the pan) and nearly unusable. It is appalling to me that cookware that is as expensive as these could not be designed with functional handles. In the future I'll stick with All-Clad.
