In North American Fish Cookery, A. J. McClane gives us 109 recipes featuring dozens of fish and shellfish species native to North America. The recipes are imaginative; include species almost sure to lurk in waters near the home of any reader (think black bass, perch, walleye, catfish and trout along with a variety of more exotic freshwater species, ocean fish and shellfish). An attractive photo that is sure to spur the cook's creativity in presenting the various dishes accompanies each recipe.
Although some of the recipes are straight out of traditional American kitchens (catfish and hush puppies, for example), others draw on international roots. Overall, the recipes are not at all difficult, and with a bit of creativity most lend themselves to substitutions. Try the Lobster-Asparagus Soup with Dungeness crab, prawns or salmon instead of lobster. The introduction provides excellent guidelines on purchasing, caring for and preparing seafood as well as theory that will help cooks expand their skills with finfish and shellfish.
