With the unique design of the Medina River Fish Fryer the cooking oil above the heating element stays at the desired temperature of 325 to 350 degrees, while the oil in the lower chamber remains cool the unique design allows any debris that falls from the fish or other foods being cooked, to pass through the hot oil in the frying chamber and into the cooler oil in the lower chamber. As a result, the Medina River Fish Fryer's uniqie design prevents this debris from burning and scorching or continuously circulating in the upper chamber's cooking zone. Therefore, the cooking oil does not go rancid and stays fresh longer. We recommend that you replace the cooking oil after 25 to 30 uses. There is a 70% savings on cooking oil using the Medina River Fish Fryer when compared to the "bucket Fryers" where the oil has to be replaced after 5 to 7 uses. The flow through round beating element allows the cooking oil to consume more of the BTU's. When using conventional "bucket fryers" most of the heat is lost to the surronding air. When you drop a basket of fish in to the Medina River Fish Fryer there is no major temperature drop, the temperature stays within a few degrees of the original temperature. The temperature stays up and the food cooks faster resulting in less oily tasting food. The Fry Baskets are loaded in the "up position" and then lowered into the Fryer. That reduces the danger of splashing oil on an open flame and causing a fire, splashing hot oil on the cook, or splashing oil on the patio surface causing a stain.

We own a BBQ restaurant and wanted to do a Friday night fish fry during lent. I was looking for a fryer that could hold up and keep up with the demand.

Well, you don't have to look any further.This is an awsome fryer and does a great job. Its well worth the money.

After the first night we used it, I drained it and cleaned it out. Just as the ad stated, all of the sediment floats to the bottom below the heated tubes prolonging the life of your oil. Keeping the oil at 375 degrees wasn't much of a problem either.
