Chanterelles are delicate wild mushrooms prized for their rich, earthy and nutty flavor, they are used to enhance pasta dishes, risottos, stews, omelets, or stuffing. Melissa's dried Chanterelles must be quickly rehydrated in warm water before they can be added to dishes; once strained, the rehydration juice can be used as a rich mushroom stock in risottos, pasta, or sauces.
