Most people looking at Simone Beck already know of her crucial role in contributing to the long success of Julia Child's landmark two volume magnum opus. After working with Chef Beck's first cookbook of her own (Simca's Cuisine) for the better part of a decade, I was happy to come upon her second. I use her two pie crusts for most of mine, sweet and savory.

This cookbook is built around whole menus, if you like those. They are useful, not so much to look things up, but for reading and contemplating the gestalt of a fully planned event. Not that her intent is for them to be followed slavishly, but to appreciate her strategy of how the courses play off against each other for a sustained experience. These menus are best for planning ahead rather than for tomorrow night.

Chef Beck has three tiers for us: simple, dressy and full bore fete, in decreasing proportion of the book. As, she says, simple does not mean careless; they are suited to any level of experience. The first set of simple centers around eggs and cheese for five main dishes. Her Omelettes en Sandwich (do not worry, no bread around these) impressively stack complementary layers.

Fish and shellfish come next with a neat fish pate with sorrel. Her side dish for crab is a ratatouille baked with rice and cheese that improves with a day in the fridge beforehand. For you fans of Clafoutis, she has a lovely one for plum or cherry.

Her menu to dazzle features ducks with lemon whiskey sauce which she pairs with a Beaulieu Cabernet Sauvignon. And when Simone calls for whiskey, Simca answers with a good slug of Kentucky Bourbon. She is quite the fan of juleps in summer.

Have all of Simca's books but this is my favorite. Granitee crab and chicken with tarragon is easy and always elegant. Great value for the book which in my opinion is priceless

It is old, worn, but a great cookbook, well worth the $ 1.00 plus $3.99 shipping and handling. I love old cookbooks, they are a great source for basic, good recipes.
