Knife Care Instructions

The performance of your knife can be diminished if not cared for properly. Please follow these guidelines to maximize the performance of Mercer's knives:

  1. After each use, carefully wash cutlery by hand with warm water and mild- to medium-strength soap; rinse and thoroughly dry it with a soft towel.
  2. Cutlery should never be washed in a dishwasher: the intense heat and radical temperature changes may cause the handle to deteriorate; the blade edges will become dull through rubbing against each other; and caustic soap will cause staining and pitting of the blade.
  3. Cutlery should not be soaked or submerged for long periods. Chlorine and bleach products discolor and pit stain-free and high-carbon steel. If chlorine or bleach products come in contact with the blade, thoroughly rinse off immediately.
  4. Galvanic action--the transfer of electrons from one metal to another--may cause pitting on the blades. To prevent this, avoid long periods of soaking in aluminum pans or a stainless-steel sink, remove cutlery from condiments (such as mayonnaise) stored in aluminum or stainless-steel pans.
  5. Always store cutlery in a cutlery block or sheath to preserve the cutting edges and prevent personal injury.

I have spent way, way more on other knives. I am not a professional chef but I do cook and use one or two knives at least every day. I have large hands. I believe the size and strength of the hand relative to the handle and blade weight mostly determines how a knife will balance in the hand and how much edge control and confidence it can be used with. Lower risks of cutting oneself go with proper fit and experience.

I have a few individual Wuesthof-Trident knives some of which cost over $200 per knife. My favorite other knife is a Wuesthof bread knife from the mid 1980s that is 11" long and I can't find anywhere else.

One day while poking around a kitchen supply store, I got sold on trying one of these Mercer 8" Chef's knives and a couple of paring knives. The kitchen supply salesman gushed about how they were the best knives for commercial and retail kitchens where you have higher end employees, they will be very happy, etc. Despite not wanting to be sold on a new knife, I was a sucker and paid the $35 for the knife.

From that point on, 6 years ago, I haven't gone back. This 8" Mercer "genesis" is perfect for my large hands. It hones really well to take a new edge and keeps the edge through a meal prep. They are super affordable, the total weight is appropriate, the balance is good. Solid place to put a thumb and control the knife well.

I really like this "genesis" rubberized handle, super good grip. Doesn't look cheap, doesn't feel cheap.

Best knife I've ever had and I've been using it daily for six years.

PS: My original of these did not come from Amazon. I have since purchased multiple Mercer Genensis products through amazon (through late 2013) and have had the same experience of quality. However, there's always the chance that a lower quality product will wind up being supplied. I've had that happen multiple times where a product is downgraded by a manufacturer after it gets a good name :\

I am a proficient cook who also spends a lot of time cooking. I am particularly picking about my cutlery. I have been using a high-end brand for 20 years and in recent years have become disenchanted with the performance quality of their knives. Watching my husband saw through a roast in the kitchen was for me like hearing nails on a chalkboard. I decided to take the leap and try Mercer and my husband and I are not only pleased, but are frankly stunned by how this knife has delivered over and over again and at a far more affordable price than the "big" name brands. How could such a reasonably priced knife be so great? We don't really care how, we just know it is! We have tested it on everything from pork roast, to vegetables and even a tomato and mozzarella for caprese. It has consistently sliced through without any effort and clean as a whistle. We will not go back and moving forward we plan to purchase all of our cutlery exclusively from Mercer. We strongly recommend this knife and think it makes the perfect gift because it carries the perfect gift price range and is an exceptional performer.

When I first started culinary school, my kit included a 12 inch chefs knife. It worked fine, but I wanted a smaller knife for chopping. This is the perfect knife for that. It is just big enough without being so large that your fingers get in the way.

Superb knives. I own a busy, high-volume restaurant and these are the only knives I use now. Over the years I've used several big name knives such as Chicago Cutlery, Wusthof, Calphalon, etc. These outperform and are better made knives than a lot of the knives in the 100-150 range. The knives have edges which stay sharp for a long time and the handles are well made. I've ditched my old knives and use the 8" forged knives and Santouku almost exclusively for my business. Great Value. The only knife I can think of that can outperform these are 300 hand-made Japanese high-carbon hand forged blades. But for 30-40, these are the best knives I used in the 0-150 dollar range.

I really like my 8 inch Genesis. I actually own a few chef's knives that cost over 20 times that of my Genesis, and despite this I still greatly enjoy using my Genesis frequently. It is just a great knife all-around, capable of tackling most-any task you may need it to, and is an incredibly awesome value.

The chef's knife is not the lightest in the world, but well-balanced, has a comfortable handle, and is TOUGH. The Genesis is capable of taking the harder work that one would not want to use a more fragile knife on. The edge geometry is very good, and especially for a knife this inexpensive. It does a very good job holding the edge, and sharpening is reasonably easy to do. The handle itself also allows various style grips, and is somewhat of a hybrid between Eastern and Western designs. It is a very comfortable handle to use in a pinch grip for a rocking cut such as the modified fulcrum motion. It can also withstand heavy chopping (when doing over the correct material, such as a thick end-grain maple butcher block.) And as-advertised, the steel does a great job at resisting staining or rusting.

And you get all of this for a knife that sells for under $35. That's one great bargain!

If you are considering this versus something like the Wusthof Classic, Global, JA Henckels, etc., I honestly prefer the (less expensive) Genesis over these other makers. While it may not hold an edge as long as some Wusthof models, I like the ergos, the grind, and how the knife feels using the pinch grip much more.

There are no other way to say it...the Genesis line are high-quality, solid-performing, super-tough, and super-durable chef knives priced like bargain knives, but perform better than many knives costing significantly more.
