Knife Care Instructions

The performance of your knife can be diminished if not cared for properly. Please follow these guidelines to maximize the performance of Mercer's knives:

  1. After each use, carefully wash cutlery by hand with warm water and mild- to medium-strength soap; rinse and thoroughly dry it with a soft towel.
  2. Cutlery should never be washed in a dishwasher: the intense heat and radical temperature changes may cause the handle to deteriorate; the blade edges will become dull through rubbing against each other; and caustic soap will cause staining and pitting of the blade.
  3. Cutlery should not be soaked or submerged for long periods. Chlorine and bleach products discolor and pit stain-free and high-carbon steel. If chlorine or bleach products come in contact with the blade, thoroughly rinse off immediately.
  4. Galvanic action--the transfer of electrons from one metal to another--may cause pitting on the blades. To prevent this, avoid long periods of soaking in aluminum pans or a stainless-steel sink, remove cutlery from condiments (such as mayonnaise) stored in aluminum or stainless-steel pans.
  5. Always store cutlery in a cutlery block or sheath to preserve the cutting edges and prevent personal injury.

I received this paring knife after sampling and handling Wusthof Classic and a variety of J.A. Henkel knives. The Mercer has a different gripping (a special polymer rubber) which feels perfect in your hand and gives absolutely nothing up to either the Wusthof or the Henkel. Most culinary schools and many chefs swear by these. Highly recommended.

Very nice solid blade, comfortable weight with a nicely textured handle for grip. I bought this to replace a nice Henckel paring knife that had been broken by a collision between a pugnacious pumpkin and an exuberant child. I don't see such misfortune happening with this more solid knife! It feels and performs better than the Henckel we had.

I got the Mercer Genesis paring knife based on my good experience with the 8" chef's knife in the same line that I already have.

I'm not disappointed- this paring knife lives up to the reputation that the chef's knife has, and in some ways, stands out from the pack even more. The non-slip grip is really useful on a paring knife, and so is the relatively large grip. Makes for quite a bit of controllability and comfort.

My next kitchen knife purchase will likely be Mercer Genesis.

Mercer Cutlery Genesis 3-1/2-Inch Paring Knife
These knives are wonderful. We purchased 2 after reading about them in Cook's Illustrated. Now I'm back for an additional boning and bread knife. They handle well, hold an edge, and are very affordable.

A really good, balanced, very sharp paring knife that is made with great steel, has an ergonomic handle and is also well constructed. When it gets a bit dull, a couple swipes through a adjustable ceramic knife sharpener restores it.

The paring knife is very sharp. It was well packed for shipment. This knife is very comparable to the Wusthop knife it replaced. Very please with its quality. Highly recommended.
