I'm a sushi chef and thought I would give this knife a try. It arrived sharp as a razor blade and holds it's edge like other cutlery that I have spent 4 times as much on. For the money, you cant beat it. I will be trying other products made by Mercer.

This is a very nice knife for the price. It comes sharp out of the box. It does a nice job on fish slices, but I think it would be a little sharper to cut through rolls. If you are cutting rolls, wiping the blade with a moist towel after each cut makes it much easier to cut the entire roll smoothly. I would say that it would have been great if it came with a knife cover or sheath, since it is a very long, sharp knife. The wood box that it comes in is nice, but it is a bit bulky for storage. Also, keep in mind that the blade is only sharpened on one side as true sashimi knifes are, so a regular knife sharpener that sharpens two sided blades should not be used on this knife.

This does not have the bulk or the single bevel cutting edge of a "real" yanagi sushi knife. However, it is an excellent slicer and will give you the feel of a longer yanagiba if you haven't used one before. The thickness is probably close to a fugubiki. Either way, you can see if you dig a knife like this before taking the price plunge on the real deal.

I just got this and have only used it one day. But the steel is definitely top notch so far, a little hard to clean I got the longer yanagiba, but a wet towel then paper towel does the trick. It floats through the fish I cut with no snags at all the fish barely moves. Normally my razor sharp santoku or deba will drag the fish with it.

The handle is not sealed I will probably polyurethane it for water resistance.

For 30 bucks this is a no brainer it's easily worth 70 to 80 and I'm a cheapskate

It's an okay starter knife, though like most stainless knives, it loses its edge quickly. If you're just getting into sushi, then this is probably your best bet, since the initial sharpness is decent, it's easy to take care of, and you don't have to worry about rust. But if you're experienced, or even semi-experienced, and are prepared to take on the responsibilities of owning a real Yanagi, then invest some money for a higher quality, sharper knife - and stay away from stainless steel.

The knife is good, and well-priced, but no comparison to one of my high-carbon knives (which range from $200 to $600).

blade seems that it will hold it edge well. but will update this after some time, so don't take this too seriously yet. Also important is how well it will hone after some time. but expect way more time for a review on that.

the handle is a very cheap and rough untreated wood. the red cardboard that cames holding the knife in place stained the wood grain to an ugly pink. but washing with soap and hot water fixed that. now i have to figure out how to treat that handle correctly so it will last and be confortable to use.

weight is just about right. altough i fell it could be a little heavier on the handle. for the price, not much to complain really. As the other reviewer said, when the time comes to buy other styles, i will surelly include this brand on the research.

Great knife for the price. I am the Assistant General Manager at a Japanese restaurant and I use it everyday. It came very sharp out of the box and holds its edge. Now it's no shun but for under fifty bucks I would buy it all over again.
