This knife is great for chopping fruits and veggies! I've only been using it a couple of months but so far it has stayed sharp and cleans easily. The blade is really thin, which I thought would be an issue, but it works well and has become my "go-to" knife.

Always skeptical purchasing knifes. Seems that I spend alot of money to only be disappionted. I was truely surprised how light the knife is. The blade is fairly slim, but honestly I am surprised how well the knife holds its edge. butchering meat works well. I will not use it to do any chopping of bones, too lite. Blade sharpens very well.

I've been in love with the Santoku style knife for about five years. I own three of them, all in this size. I'm a professional chef, and have been using a low end Santoku out of my work kit, but the blade was almost three times as thick as the nice one I use at home, which I prefer, and the additional thickness made it difficult to put a fine edge on. This Mercer knife is very light, and the blade is very thin. I'm not sure if I'm convinced about the longevity of this tool, but I do have some pro's and con's I'd like to share. The handle is comfortable and sturdy. It was nicely sharp out of the packaging, but after a days work it needed to be put on a stone and sharpened. That lasted several days before it lost the edge I so appreciate with this style of knife. I find that I need to sharpen it more than I would with most knives, but it takes only a few strokes to put the edge back, so while I regret that it doesn't stay as sharp for as long as I would like, it is quick to return to a nice edge, capable of slicing soft tomatoes, cutting through peppers without crushing them, and slicing Ahi without shredding the flesh. I should also say the blade is not the easiest to clean in a hurry.
