Knife Care Instructions

The performance of your knife can be diminished if not cared for properly. Please follow these guidelines to maximize the performance of Mercer's knives:

  1. After each use, carefully wash cutlery by hand with warm water and mild- to medium-strength soap; rinse and thoroughly dry it with a soft towel.
  2. Cutlery should never be washed in a dishwasher: the intense heat and radical temperature changes may cause the handle to deteriorate; the blade edges will become dull through rubbing against each other; and caustic soap will cause staining and pitting of the blade.
  3. Cutlery should not be soaked or submerged for long periods. Chlorine and bleach products discolor and pit stain-free and high-carbon steel. If chlorine or bleach products come in contact with the blade, thoroughly rinse off immediately.
  4. Galvanic action--the transfer of electrons from one metal to another--may cause pitting on the blades. To prevent this, avoid long periods of soaking in aluminum pans or a stainless-steel sink, remove cutlery from condiments (such as mayonnaise) stored in aluminum or stainless-steel pans.
  5. Always store cutlery in a cutlery block or sheath to preserve the cutting edges and prevent personal injury.

When I first started culinary school, my kit included a 12 inch chefs knife. It worked fine, but I wanted a smaller knife for chopping. This is the perfect knife for that. It is just big enough without being so large that your fingers get in the way.

I bought this from a seller who was advertising on Amazon. It happened to be cheaper there.

I love this knife. However, my son the chef says that the end of the blade, where it gets thick where it meets the handle, is annoying because then you have to always watch that and you loose that section of the knife for cutting. I still love this knife.

The good news is that my son loves the Mercer 7" Santoku knife that I got in the 4 piece starter set that I bought at the same time. He uses the 7" Santoku for everything when he cooks in my house. He says that is a good knife for me but for him he would prefer a bit more length. So at least he likes one of the knew...uh...new knives I bought.

I am happy with the Mercer knives. They are great in general, and especially for that price.

I have a few of the knives from the Mercer line and they are excellent. They are sharp, comfortable and take a clean edge really well when you sharpen them in the futre. The price is great, I would recommend these knives to anyone.

I have spent way, way more on other knives. I am not a professional chef but I do cook and use one or two knives at least every day. I have large hands. I believe the size and strength of the hand relative to the handle and blade weight mostly determines how a knife will balance in the hand and how much edge control and confidence it can be used with. Lower risks of cutting oneself go with proper fit and experience.

I have a few individual Wuesthof-Trident knives some of which cost over $200 per knife. My favorite other knife is a Wuesthof bread knife from the mid 1980s that is 11" long and I can't find anywhere else.

One day while poking around a kitchen supply store, I got sold on trying one of these Mercer 8" Chef's knives and a couple of paring knives. The kitchen supply salesman gushed about how they were the best knives for commercial and retail kitchens where you have higher end employees, they will be very happy, etc. Despite not wanting to be sold on a new knife, I was a sucker and paid the $35 for the knife.

From that point on, 6 years ago, I haven't gone back. This 8" Mercer "genesis" is perfect for my large hands. It hones really well to take a new edge and keeps the edge through a meal prep. They are super affordable, the total weight is appropriate, the balance is good. Solid place to put a thumb and control the knife well.

I really like this "genesis" rubberized handle, super good grip. Doesn't look cheap, doesn't feel cheap.

Best knife I've ever had and I've been using it daily for six years.

PS: My original of these did not come from Amazon. I have since purchased multiple Mercer Genensis products through amazon (through late 2013) and have had the same experience of quality. However, there's always the chance that a lower quality product will wind up being supplied. I've had that happen multiple times where a product is downgraded by a manufacturer after it gets a good name :\
