This freeze-dried blend comprises 4 selected bacteria (Lactococcus lactis subsp. lactis, Lactococcus lactis subsp. cremoris, Lactococcus lactis subsp.lactis biovar. diacetylactis and Leuconostoc mesenteroides subsp. cremoris) to ensure consistent results. These cheese making cultures 'ripen' the milk, rendering it acidic and in the correct form for the rennet to do its job - turning milk into curds and whey. The contents of the sachet are simply mixed with milk according to the accompanying instructions to produce one liter (2.1 US pints) of starter solution, which is enough to inoculate over 30 batches of cheese

Initially, I was going to buy this exact same packet on EBay for $4.99 plus $2.07 shipping. I decided to look at it via Amazon, and there was no shipping cost mentioned at all. I put it in the cart, and it said to go ahead and check out. When I signed into Paypal, it then added $3.42 minimum shipping for this tiny little packet! Was not impressed. If they're going to advertise on Amazon, there should be truth in advertising, and it should also match Ebay's shipping cost. Why almost double for the same item?

Not good. Back to the drawing board!
