They just don't cut, they open way too wide for a normal hand, and if the handle slips out of your hand, the shears pop open and the spring flies out.

I bought these to prepare spatchcock Chicken and, wow, the difference between using these and struggling with a knife or dull kitchen shears is amazing. They sliced right through the chicken bones with no trouble at all.

They are also very well designed--they clip keeps them securely closed while they are in the drawer and the spring is completely encased in the metal so you won't pinch your fingers or get food particles in it.

After having too many pairs of cheap poultry shears break, it was time to get a professional product, and this is definitely a good investment.

My first task was splitting a whole chicken ready for the Weber, a task that was done with ease with this tool. These shears are comfortable on the hands and they cut extremely well. After use, I just popped them into the dishwasher.

Highly recommended, this quality product should give a lifetime's use.

We bought these shears to cut raw chicken, hoping to make short work of transforming a large package of whole wings into drumettes and flats. The plus - construction and material are excellent. Have had zero issues with the spring detaching. There is a good sized notch at the back where your leverage is greatest. The minus - these shears are a handful. I have large hands and releasing the grip sufficiently to fit a bone into the notch means I am at the limits of grip. With a pinkie to thumb span of 9 3/4", it's difficult to manage. I don't think someone with small hands would like these shears much.

Out of the box performance was good but not great. I had to tighten the blades on the first use because they would only cut raw skin at the tip of the blade, not in the middle and certainly not near the root. After adjustment, they worked wonderfully.

I bought it after straining mightily to cut through roast chickens from Costco with a pair of shears that look nice but can't cut through the backs and breast bones of a roast chicken. The Messermeister 10" shears have blades long enough to do the job and the handles have enough length to get decent leverage so I'm happy with it.

These are excellent shears, but not for small hands. I found it difficult to quarter a chicken as once the grips got moist they were too slippery for me to use. As a result it took me much longer to do this simple task as I had to use paper towels to try to keep the grips dry. The shears kept falling out of my hands even so. Another reviewer wrote that the pinkie to thumb span of the grip is 9-3/4”. Unfortunately that review was not available when I purchased these shears, or I probably would not have ordered them. As it is, I will have to buy a different pair. I also had problems with the spring detaching, but this was not as significant as the large grip issue.

My daughter, who is a restaurant consultant, sent me a recipe for spatchcocking (Literally "dispatch the cock") a chicken. Used the shears to remove the back from a large fowl. Snip...Snip...little effort....all done. These shears have plenty of leverage and the serrated blade grips the bones nicely. Haven't used them to joint a fowl but will report back when I do.

One mishap: I managed to pinch by belly with the handles during the job--but maybe it time for a diet :-)
