I didn't know what I was going to do with this pan when I ordered it, but I'm a baking pan junkie and the price was good, so I gave it a try.

The pan comes with a recipe for tea cakes, but I've come up with all sorts of other ideas! My first creation was what I call "Orange Gems." I used the new Pillsbury Orange Dreamsicle cake mix, then filled the indentations, piped orange frosting on top, and sprinkled them with orange colored sugar. Very easy, but they looked like they took hours! (The cake mix gave me 40 mini-cakes.) I sprayed the pan with an oil/flour mix, and the cakes fell right out. Don't fill the wells more than about 2/3 full, otherwise they'll overflow.

Next I made Raspberry Brownie Bites - using a brownie mix for a 9 X 13 pan (this gave me 20 "bites"), I filled the indentations with raspberry jam...huge hit! Caution: With a heavier batter, make sure you grease the pan very, very liberally, otherwise the edges might stick and break.

Once I got started, the ideas started to come:

Lemon cake filled with lemon curd.

Mini strawberry shortcakes, with one perfect strawberry.

Cornbread filled with tuna or chicken salad, and a piped swirl of savory cream cheese on top. Or maybe a finely-minced seafood salad, with a tiny shrimp atop the cream cheese topping.

You could make white cake filled with jam, and color buttercream pink or blue for a baby shower, or match the bridesmaids' dresses for a wedding shower.

Fill the wells with a melon-ball sized scoop of ice cream, and drizzle chocolate or caramel sauce on top.

If you're looking at this pan and think you don't need it or would never use it, guess again! I find myself reaching for it more than I do any others!

I bought several of the Chicago Metallic nonstick pans designed for small pastries, such as quiches, dessert tarts, and teacakes. The pans are uniformly excellent. The pans don't leak. Food does not stick. Crusts brown evenly. I look forward to many years of serving food that looks elegant and tastes good.

This works perfect in turning cake into a finger food. A standard cake mix makes 2 batches (40 cakes). Fill 'em with chocolate, fruit, or jelly.

Make sure you use a cooking spray such as Pam or the edge that holds the topping in will get ripped off when removing from the pan. Other than that, this thing works great; and the mini cakes are a party favorite.

This Tea Cake Pan makes a cute mini-muffin type of item. I like to use it for cornbread and put butter in the indentation.

Treat yourself to this pan. The wells are so great for fillings/piping cheeses, etc. I have really enjoyed all of this company's products -- so far!

I used this the very first day by making a sponge cake and filling them with custard/chocolate. Tried it again with dark chocolate espresso cake with mocha filling...You really need to watch the cook time, but I love this, great addition to my kitchen tools

I love these little pans! I did 2 different cakes: first one I used a spice cake mix and then made a pumpkin mousse to fill it with then sprikled some toffee bits on it. Second one I did brownies and filled them with a nutella mousse. Everyone loved them!

Love this pan. Made 10 pans of Mexican chulas to sell at our church's winter bazaar and they came out PERFECT, thanks to this pan. And cleanup was a snap. Anyone into making fancy desserts NEEDS THIS PAN.
