Product Description

Proper stir fry technique calls for fast rotating or stirring of ingredients while cooking, inspiring the rounded, sloped sides of the wok. The shape is similar to a salad bowl, designed for easy tossing of vegetables. This shape is also practical for deep frying foods such as tempura. As the pan is wide at the top and narrow at the bottom, frying can be done with less oil than with a straight-sided pan. A modern and convenient alternative to the traditional carbon steel wok, this wok does not require seasoning and will never rust. It also has a flat bottom so that it may be used alone on a gas or electric burner.

5.0 out of 5 stars Extremely Pleased With This Wok, December 28, 2003
By A Customer
This review is from: Meyer Anolon Advanced Stainless Steel Wok 14"
This is a heavy duty 14 inch wok, heavy gage stainless steel and it has a small flat 5 inch base to concentrate the heat from a 6 inch burner. The outside is polished to a mirror finish and the inside of the wok has a brushed finish. The inside of this wok is a rounded bottom wok with a small flat surface at the bottom. Around the edge of the wok, the edge is turned under to form a rounded lip; no sharp edges as is found on the cheaper carbon steel/hammered woks. Unlike stir fry pans where the sides of the pan are sloped or rounded which allows the food you just stir fried to slip back into the oil at the bottom, this wok has a shallower slope which allows the meat you just stir fried to be moved away from the oil at the bottom and the meat stays up on the sides and hot while you stir fry the vegetables and noodles at the bottom on the wok. When you are ready, you can recombine all the meat and the vegetables together in the wok; no more putting the meat in a bowl on the side to keep it from overcooking when using a stir fry pan. And no more rusty carbon steel woks which get sticky from the oil you use to season and store the wok. Been really easy to clean with soap and water. Extremely pleased with this wok and it's price.

5.0 out of 5 stars A comments from a chinese homemaker, August 20, 2004
This review is from: Meyer Anolon Advanced Stainless Steel Wok 14"
First thanks for the previous review, it really helped and is true. I recommand this to all my friends already! Indeed, this is a fantastic wok, especially very good price for this kind of quality. chinese cuisine requires a lot of saute-food with high temperature, the non- stick one is proven that it can not take temperature over 250 f. We are a family of 3 people, the size 14" is just good. If you cook for bigger family, probably you would consider a bigger wok. Buy it!

3.0 out of 5 stars Not for use on large burner gas stoves, January 17, 2005

This review is from: Meyer Anolon Advanced Stainless Steel Wok 14"
It certainly is made well enough but that flat plate 'bonded' to the bottom is too small. My stove has two large burners on the front and the flames completely miss the plate and just warm the sides. I have smaller burners in the back but there isn't enough room to get the wok squarely over the burner. Might be better with electric stove but if you have gas and large burners in the front I'd pass this one up.
