This Circulon Classic 3-quart saucepan is the ideal size for most households, as it's large enough to handle muscular jobs like boiling potatoes or pasta, yet also handles more delicate tasks--such as making a classic béarnaise sauce--without burning the bottom. Add in a snug-fitting, 18/10 stainless-steel domed lid, which gives the pan extra clearance along the top, and you have a versatile saucepan that stews its sauces to just the right degree.
Like all Circulon Classic cookware, this saucepan is hard anodized, and its center core of aluminum distributes heat evenly throughout, even up the sides. Classic cookware is also recognized for its ideal weight--heavy enough for serious cooking yet light enough to carry easily from stovetop to counter. The interior of the cookware features a series of Hi-Low concentric grooves, which protect the nonstick surface and keep food from getting stuck in the pan. Only the Hi area is subject to scratching from metal utensils, but users should keep wooden or nylon spoons and spatulas on hand just in case. The cookware's stay-cool handles (oven-safe to 350 degrees F) are made of a hest-resistant material that is cool to the touch, even after an hour of cooking.
