Microplane 38006 Professional Series Large Shaver

The Microplane graters come in different series and there are so many kinds of blades, so you may find it hard to choose one that you need.

About the size, shape, grip and other overall design of the 38000 series, these graters are very well thought out and executed. They are very convenient to use on a bowl, a pan, and a cutting board. They are also very easy to use on the serving dishes in the last steps of presentation.

At the time of this writing, I have used 3 products in 38000 series, plus the slider attachment. I bought different graters so that I can experiment with all sorts of ingredients to make novel garnishes, or something interesting that people wouldn't think of. The manufacturer says this shaver is good for chocolate and hard cheese, but I was hoping that it should work with vegetables and other things to make pretty flakes. One of my conclusions is: when they say this grater/shaver is good for such and such, you'd better believe it. Does it work just as well with other ingredients? It's hard to predict without experimenting. A lot of hard vegetables didn't work well, but some soft ones did. This is sometimes because it gives pieces of wrong size, wrong thickness, etc., and sometimes because the ingredient is too fibrous, not stiff enough or easily breakable. Anyway, you are entitled to experiment with this shaver and you may find interesting results, if you aren't discouraged by many things you can't shave nicely on this product. Some of my findings: shaved ginger flakes are nice, but depending on the direction of the fiber in the ginger, it may not be as pretty; try different sides of the ginger when necessary. Citrus skin can be nicely shaved to make flakes that are larger than what you get from the zester. This is very nice on top of chunky soup, grilled fish, what not. My conclusion two is: besides shaved chocolate and shaved parmigiano reggiano, this shaver has a lot of potential for creative uses but none is too obvious and requires some experimentation. (Small grater is at the opposite end, I think---it does exactly what you expect and not much more.)

I may try more graters in this series if I get some idea of how I can make use of other blades.

Finally, a grater that really works! So far I've used it on mozz and cheddar cheese and carrots, and it made quick work of them, and the cheese cleaned right off. Plus it can be soaked for hours without damage, my worst kitchen habit. I have this and the super fine model and these two seem sufficient for 90% of my grating needs. Definitely get the glove or the food holder as the only drawback is grated fingers! Another item I should have treated myself to years ago.

I purchased this shaver hoping it would shave nice slices of cheese. It doesn't do that well, as the cheese tends to curl. It should work well, though, to make chocolate shavings/curls. Very sharp and well made, comfortable to hold. Purchased cut-resistant gloves to go with it.

I love the Microplane graters, but was very disappointed with the acrylic mounted models; even with careful handling and no dishwasher, they would crack and break within a year. Spend the extra $$ for the professional series with the metal sides! This large shaver is wonderful for grating hard cheeses, like parmesan, or chocolate and it is much easier and safer to use and clean than the ribbon cutter that cuts in both directions. I love this one so much I also give it to friends and family who enjoy cooking.

For so long I have been using inferior graters as microplane products are very expensive in Aus. Finally bit the bullet and brought several, love them all and the covers that come with them protect the product and my hands when getting th in and out of the drawer

When my food processor quit working, I replaced it with a set of Microplane graters (the 35000 series). At the time I placed my order, I didn't know about Microplane's professional graters (the 38000 series). However, after using them, I was so impressed that I sent the 35000 series to my daughter and ordered the professional 38000 series for myself.

I do a lot of cooking, so I know these graters are going to get a lot of use. I'm in no mood to buy another food processor, as I rarely used the one I had and a food processor takes up a lot of valuable kitchen storage space. The Microplane graters, on the other hand, fit neatly inside a drawer and have protective covers on them.

I'm giving the 38000 series graters a 5-star rating because they're better quality than the 35000 series graters and look like they'll last longer. They are very sharp and do an extremely effective job. I especially appreciate the sliding hand guard. I very seriously doubt I'd use a tool as sharp as this without something to protect my hands.

This is a perfect grater, several classes better than the one with the plastic handle (I had that first, but the handle couldn't bear the force and broke).
This one has no such problems and the rubber anti-slip band helps a lot
