Vietnamese Noodle Soup

Ingredients
  • 3 cups organic reduced sodium chicken stock
  • 1 clove garlic, minced
  • 1 tsp minced ginger
  • 1/4 tsp cardamom
  • 1- 7oz bag of Miracle Noodle Angel Hair Noodles
  • 1 boneless, skinless chicken breast sliced crosswise into 1/8 slices
  • 1 cup bean sprouts
  • 2 scallions, sliced into 1/4 inch pieces
  • 1 tsp chili sauce (optional)
  • 1/2 lime, cut in half
  • 1/4 cup chopped cilantro
  • 1/3 cup of mushrooms-any variety (optional)
  • 1 thinly slice chili pepper with seeds removed (optional)
Directions

1. In a 3 quart saucepan, bring chicken stock to a boil over medium-high heat. Add garlic, ginger and cardamom and let simmer for 10 minutes.

2. In a colander rinse noodles with warm water for a couple of minutes, pat dry with a small hand towel or paper towel to remove excess water. Divide noodles into two bowls.

3. Add chicken to stock and let cook for 5 minutes (until completely cooked).

4. Pour soup into bowls over the noodles. Divide bean sprouts between 2 soup bowls then top each serving with half the scallions and chili sauce. Garnish bowls with a slice of lime and pieces of cilantro.

The soluble fiber found in the Miracle Noodle slows digestion and prolongs the sensation of fullness and is an essential part of any weight loss program. The smell is horrible when you open the package and it didn't matter how long I rinsed them or boiled them... They tastes like the smell.

I am not sure how long Miracle Noodles have been around, I discovered them sort of by accident.

I am about 8 to 10 years late to the low carb lifestyle but I figured any diet that allows me to eat meats and cheeses can't be too terrible.

All was fine until I started missing my old carb friend...pasta. IT was a crippling blow to my diet as I literally went into anxiety mode everytime I saw pasta in a tv show, commercial, movie, read about it...hell, I almost had a breakdown while watching "Lady and the Tramp".

Almost as a joke I Googled "zero carb pasta" just to laugh at myself but something unexpected happened. No, Google did not grow a hand and smack me for being stupid, it actually returned the Miracle Noodle page in the results.

I was skeptical...who wouldn't be? It is simply not possible to get a real pasta experience from a plant. Or so I thought! On a whim and without doing a terrible amount of research I ordered a ten pack of angel hair noodles. 70 glorious ounces of zero carb/zero calorie noodly goodness.

For the record, the following is true:

They stink. Yes, there is an odor when you open the package due to fermenting, but once the noodles are washed and boiled the smell is gone and there is no foul taste associated with the smell.

They are flavorless. Yes, they don't have a starchy flavor so common in pasta and noodles because they are not made from starch. They are simply plant fiber.

They have a rubbery texture. Sort of, but if you follow the instructions this is minimized and the end result is on par with a toothsome al dente pasta. It is not like chewing on rubber bands.

The noodles do take on the flavor of whatever you cook them in, sort of similar to the way tofu operates.

Okay.....I tried these noodles initially because of the HCG Diet. I continue to use them now because they are delicious! Not to mention how good they are for you.
If you have never had them before....be ready for the smell of fish when you first open the bag. (they are stored in water) The key to getting the smell out is rinsing thoroughly in cold water before cooking them.
They are easily prepared....
I found that pouring boiling hot water over the noodles to warm them works great, opposed to boiling them in the water. Patting the noodles dry (I use paper towels) before adding your favorite topping is a must!! This keeps them from becoming slimy. If you have left overs, they reheat wonderfully!! In fact I find everything taste better the next day.
The texture is definitely different from egg noodles. They are kind of like gummy worms without any flavor. The noodles absorb the flavor of whatever you top them with. Spaghetti & stir fry are a couple of my favorites!!
One last note.....
The unopened packages store without refrigeration and have a 6 month shelf life.

I am following the South Beach diet and saw these on Dr Oz. Who wouldn't want to have "pasta" while not actually having pasta? But, all the negative reviews freaked me out, so I was nervous to try them :) However, I did follow many reviewers' advice and they were delicious. No calories, no carbs...I'm in!!

Here's what I did. Opened the bag, dumped them in a mesh colander and rinsed, rinsed, rinsed them. Blotted dry on a paper towel. Heated up some olive oil and a little garlic and threw the noodles in. Added what I had on hand: some cooked chicken, cooked diced zuchinni, a little spaghetti sauce and ricotta cheese. Let simmer for maybe 5-8 min. Sprinkled with some parmesan cheese. Really DELICIOUS! My husband even ate some and didn't say a word. I thought they were really good. Mixed in with a bunch of other ingredients and sauce these tasted like angel hair pasta to me. Worth it! Note the 7 oz package is very small. Really one large meal or 2 smaller meals. Probably only about 1-1/2 cups of noodles.

If you are following a low-carb diet these are a treat. More realistic pasta taste than a spaghetti squash, for example. Definitely worth a try.

ok so you guys, after reading all the reviews, I took a risk and ordered these. The smell when opening was pretty bad, but that is just the preservatives. Wash the noodles under cold water for 4-5 mintues. This takes away the taste and smell. I cooked these for the first time in hot water for about 1-2 minutes and put it sauce. The first bite was OK but after a few more bites, it was disgusting, not because of the taste because you cannot taste the noodles, it was because of the texture. It really was like rubber bands like all the other reviewers said.

So i kept experimenting, and realized that after rinsing 4-5 minutes, you have to boil it in hot water for 5-7 minutes, then rinse them in cold water again for a minute. Mix it in your sauce and it is alot softer and that rubber band texture is completely gone. It was like vermicelli noodles. Im going to try the fettuccine noodles next but my last experience was so much better.

This is genius!

I purchase Angel hair first and after that bought a big box of angel hair and fettuccine! The product is AMAZING! Don't get fooled by all these negative reviews!

If you like Asian food, you probably already know that their pasta doesn't taste like American/European kind. it has a different texture and taste. So these noodles taste exactly like the ones you order at Big Bowl :)

The comments about the smell are ridiculous! How many raw uncooked food smells good? Are you kidding me? For instance, I love steamed broccoli but it smells bad while steaming! :)

PLEASE follow the instructions: rinse in cold water for at least 15 seconds and boil for one minute, dry in paper towels. if you don't follow instructions, you will ruin ANY food, even your most favorite!

Since the pasta is 0 calories, I finally could indulge myself with a really good pasta sauce ( no low fat anymore ) or some seafood Alfredo! the possibilities are endless. Please note that the noodles even better the next day since they easily absorb all flavors.

Absolutely delicious and guilt free!
