Product Description

Authentically Japanese in design, each knife features 101 layers of steel-50 layers clad on each side of the Cryodur-hardened SG2 microcarbide steel core-forming a delicate Damascus pattern with a Rockwell hardness of 63. Each blade in the Birchwood collection is hand-honed using a traditional three-step honbazuke process. It's sharpened twice on whetstones with custom grits, followed by mirror polishing on a leather wheel. The genuine hamon edge-a visible line where flexible outer layers and incredibly hard core layer meet-is reminiscent of legendary Japanese swords. A hamon edge is a sign of superior craftsmanship. The D-shape of the natural Masur birch handle creates a comfortable grip and ensures tireless cutting, even with frequent use. Handle features an intricate mosaic center pin, red detailing, and engraved endcap. The chef's knife is the kitchen workhorse, letting you chop, dice, mince, and slice meat and vegetables in large quantities. Available in a variety of blade sizes to meet your needs. Hand wash. Sharpen with Miyabi sharpening stones. Limited lifetime warranty. Made in Japan.

Beautiful ... exceptional craftsmanship. Great blade, sharp and thin. The relief on the end of the blade means you can 'choke up' on the handle, this is a nice feature. Hard to go wrong with this knife. The handle may need some wax or oil, it looks untreated or finished but very lovely, all of it. I think I fondled and admired this for almost 20 minutes straight the first time I took it out of the box.

I did extensive research on different knife companies, types of steel, rockwell scores, customer reviews etc and decided to take a chance on this blade. I have been using Global knives for the past 4 years and thought I would get a nice all around Chef's knife. The look and balance of this knife is amazing. It truly is beautiful to look at, however that's about all it brings to the table. The first thing I cut out of the box was a yellow onion. I immediately noticed there was a significant difference in drag between this knife and my Global knives. Next test was a tomato which it did better with, but yet again there was a significant difference in drag. Next test was a piece of fresh Mahi Mahi - It performed much better with the fish, and I would say the drag was comparable to the global. After a few more tests it was apparent this was a sub-par blade compared to my Global knives. If you are only cutting meats, poultry or fish it may be a good choice, but it struggles with denser veggies.

I fell deeply, madly in love with this while trying out knives at Sur la Table. My intent was to treat myself to a new knife and I wanted a Shun. However, this was by far the sharpest, most effortless knife I tried and knew right away this was the knife for me. It cut carrots effortlessly. Like a hot knife through butta, but betta. And you have to see this knife. It is a work of art. I thought I had good knives, and I do. Most are Henkel/Wusthofs, and I sharpen them myself on a stone and steel. Anyone would consider them excellent and sharp. But this Miyabi is in a whole other realm of excellence and sharpness. Best $250 I've spent in a very long time. If you cook a lot or enjoy cooking, you deserve this knife.

Life is short, get the knife.

All the knives in this series are absolutely Gorgeous and cut amazingly. The pictures do not do these knives justice. The steel and handle are so pretty and intricate. You do not even need to put any pressure on the blade for it to smoothly slice through anything. My husband and I already own 4 of the knives in this series and want to get more. We don't have much money at all but these are a must have for us. Never skimp on the knives; you will regret it. They will get plenty of use and are true works of art to have in the kitchen.
