This is a magical book. Mexican food is vast, bold, spicy, festive and over all, plain delicious. Richard Sandoval brings a new element to this mix, Complexity. Mr. Sandoval polishes a Diamond in the rough.The genius of this chef lies in the fact that he gives layers of flavor to ingredients that are known to be overpowering. Latin American food in general, is very direct and bold. It is an incredible achievement to tame and refine these ingredients, to create dishes that reveal contrast and balance, while preserving the essence of Mexican folklore. The Mexico of these days is vibrant and cosmopolitan but has deep roots of tradition. Mr. Sandoval?s cuisine is a great representation of this era.

This is a beautiful book with many great ideas for creative Mexican cooking. There is not a typical enchilada or burrito recipe in the book, and the photography is wonderful.
