This is the first cookbook I came across about eating Paleo. I heard that the Paleo diet can help you lose weight, and even help improve your health. At first, I didn't know what to expect, and honestly, I thought that the Paleo diet consisted solely of beans, plant-based foods and grains. I was really expecting a boring, bland list of recipes. Was I wrong! The author, Summer Accardo, creates these delicious sounding recipes that I cannot wait to try out. I also learned the concept behind the Paleo diet from reading the book, and I am now a huge fan. I highly recommend this book because it contains recipes that appeal to a wide range of tastes. Also, the recipes are so simple and fast, that just about anyone can make them, regardless of their cooking skills. Great read!

This is probably the most useful recipe book that I have came across so far, I've read at least 5 from Amazon alone and this book is better than all of them combined. I have always been interested in transitioning to a Paleo diet but I never really felt knowledgeable enough about the recipes to make the change. I'm glad I came across this because now I have definitely made up my mind to move onto a more natural and healthier diet.

The content of the book is really helpful and there are tons of different recipes that really caught my eye, it's good to know that I won't have to sacrifice taste for healthiness - it's great to find that medium in between as usually with most diets you have to choose one or the other. The directions are really detailed but also written in a manner that is easy to emulate and I am quite excited to try some of them out; I'm not the best cook in the world so the fact that the recipes are easy to follow is really a big bonus for me. I couldn't be more satisfied with the purchase, it's definitely worth the investment and I'm sure my body will be thanking me in the next few weeks

Summer Accardo, RN is a registered nurse who has a passion for health, wellness and nutrition. She enjoys writing books about how proper nutrition and food preparation methods can enhance optimal health, while boosting immunity. She is the former Director of Nursing Services for a large, 400 bed facility, and enjoys educating students and patients on how to manage chronic disease, pain, anxiety and depression.

Summer enjoyed working in critical care units such as coronary care and intensive care, and was always encouraged when her patients made progress and were well enough to transfer to a regular medical floor. She often visited her patients after they transferred off the critical care unit, and was always overjoyed when they remembered her. Although Summer has been a registered nurse for years, she still becomes overjoyed when patients tell her that they appreciate the kind, compassionate and professional care they were given while Summer took care of them.

She believes that when a person is ill, kindness, a smile, and lots of encouragement play important roles in the healing process. While sharp clinical and assessment skills are very important in patient management, emotional support is just as important in returning the patient back to his pre-illness state of mind. She believes that every single staff member in a hospital needs to have exceptional bedside manner skills in order to help the patient feel good about his care and recovery.

When a patient knows that his physicians, nurses, certified nursing assistants, lab personnel, therapists and dietary personnel will interact with him in a kind, compassionate and courteous manner, he is more motivated to participate in his own recovery.

Summer has years of experience working in an emergency room at a large teaching hospital, labor and delivery, general surgery, pediatrics and geriatrics.
