Driven by the dearth of healthful, tasty foods on the market and in restaurants, she began compiling delicious, simple-to-prepare recipes with one gram of fat or less. 500 More Fat Free Recipes, Schlesinger's ninth book, is a complete resource for fat-free cooking, for every meal of the day. The recipes blend a wide range of exotic ingredients such as rose water, kale and couscous, with more commonplace ones like potatoes and peppers. The result is a cornucopia of savory, unique dishes: from Baked Onion Rings to Lemon-Blueberry Sorbet, or Cucumber Raita to Pear-Ginger Quick Bread. Each recipe includes easy-to-follow cooking instructions and a nutritional chart showing calories, fat, cholesterol, protein, carbohydrates, dietary fiber, and sodium. In her latest attack on the fat-filled American diet, Schlesinger (500 Fat-Free Recipes; 500 Fat-Free Pasta Recipes) slashes recipes down to one fat gram or less per serving. Her ploys include eschewing oils, meats and egg yolks; enhancing flavors through generous applications of herbs, spices and other assertive tastes; and sauteing aromatics (onions, garlic, etc.) in small amounts of chicken broth rather than fat. She also brings real ingenuity to unusual combinations. Schlesinger suggests such innovative fare as Strawberry-Spinach Salad with a nonfat yogurt, lemon and honey dressing; Baked Onion Rings battered with egg white, skim milk and flour and then dipped in corn flake crumbs; and Dijon-Corn Soup, a corn-and-potato potage aggressively intensified with mustard, garlic, honey and cayenne. Ethnic influences abound, from Thai Rice bright with ginger root, lemongrass, jalapeno, coriander and turmeric to Burritos with Black Bean-Corn-Raisin Stuffing. Salads are as simple as Mixed Green Salad with Balsamic Vinegar (no oil) and as piquant as Potato Salad with Pickle Relish, in which relish mixes with nonfat mayonnaise and yogurt. Snacks include Steamed Vegetable Dumplings made with wonton wrappers and Bean-Stuffed Eggs, deviled eggs without the yolks. Desserts are largely fruit-based breads, cookies and cakes. Home cooks serious about avoiding fat won't find a more appetizing cookbook. Nutritional analyses are given for each recipe.

I enjoyed browsing through this book and don't regret buying it. But I am the type that is more motivated to try a new recipe if I can see a picture... and there aren't any in this book. I have a feeling this is one of those that will just sit on my bookshelf.

I brought this book a year ago and I finally tried some of the recipes. What I found was great tasting food,fewer calories, and just about no fat. I found some dishes exotic as well as simple. My only disappointment is when it show how much was taken in, nothing show the amount/% of sugar. To me sugar is almost as bad as fat. Besides that I'm thrilled about this book and what it has done for me!
