In this follow-up to her 1994 bestseller Healthy Homestyle Cooking, Tribole continues to teach readers how to lighten up a varied assortment of family-pleasing dishes by using a smart collection of replacement ingredients and a refreshing dash of common sense. Don't cut out the mascarpone and cocoa so essential for tiramisu, she urges; pair them with fat-free cream cheese and sponge cake, swirled with frozen light whipped topping. Appetizers, entr?es, "fixings," desserts and baked goods have all been revamped the Tribole way, and she tells exactly how she did it in two information-packed introductory chapters (one featuring helpful "conversion" chartsAchange coconut flakes to coconut extract and save 337 calories!). Each recipe has a "nutritional scorecard" totaling fat and calories before and after; tricks for making changes (such as using fruit puree for shortening in cakes); and a complete nutritional analysis. Tribole is the author of Shape magazine's "Recipe Makeovers" column (but only one of these recipes appeared there), and her first Healthy Homestyle Cooking title has sold more than a million copies. For each recipe, she gives a "Nutrition Scorecard" listing calories and fat before and after her low-fat, low-calorie, low-cholesterol, high-fiber makeover. Many of the recipes are somewhat old-fashionedDOrange-Pineapple Fluff Gelatin, Chicken Kiev (though now stuffed with light Muenster cheese instead of herbed butter), Creamed Tuna on ToastDand the low-fat/no-fat substitutions make others seem like a shadow of their former selves. Obviously, however, there will be a good deal of demand.

Evelyn Tribole, MS, RD is an award-winning registered dietitian, with a nutrition counseling practice in Newport Beach, California. She has a passion helping people create a healthy relationship with their food, mind and body; whether it's through one-on-one counseling, writing, speaking or media appearances.

She has written seven books including the bestsellers Healthy Homestyle Cooking and Intuitive Eating(co-author). Her newest book is the Ultimate Omega-3 Diet.

Evelyn was the nutrition expert for Good Morning America, appearing from 1994-'95 and was a national spokesperson for the American Dietetic Association for 6 years. She was contributing editor for Shape magazine where her monthly column, Recipe Makeovers, appeared for 11 years.

She is often sought by the media for her nutritional expertise and has appeared on hundreds of interviews, including: CNN, Today Show, MSNBC, Fox News, USA Today, Wall St. Journal and People magazine.

As a speaker, Evelyn is passionate and has been called, "Wonderfully wise and funny", whether providing a keynote or full-day workshop.

Achievements and honors include, receiving the American Dietetic Association's Award for Excellence in Private Practice. Many national magazines have rated Evelyn as one of the best nutritionists in the country including: Self, Harper's Bazaar, and Redbook magazine.

Professional memberships include: the Am. Dietetic Assoc., International Society for Study of Fatty Acids and Lipids, the Celiac Disease Foundation, and the Academy for Eating Disorders.

Evelyn qualified for the Olympic Trials in the first ever women's marathon in 1984. Although she no longer competes, Evelyn runs for fun and is an avid skier and hiker. She also enjoys surfing, kayaking and white water rafting. Evelyn's favorite food is chocolate, when it can be savored slowly.

I can't say enough good things about this book!! I bet I have a dozen low-fat or diet cookbooks collecting dust on my shelves because the recipes either don't taste good, they are too difficult to make, or I can't find the ingredients. Everything I have made from this cookbook has been fantastic and quick and easy, too. My husband loves what I cook now, and it is good for us, too. I am planning on purchasing her first Homestyle cookbook and getting rid of all the rest of my low fat cookbooks!

I own several healthy cookbooks and this has become my favorite from the day I purchased it. The recipes are delicious and exactly what I'm looking for when looking for low fat, healthy, tasty recipes.

How can you go wrong with Skillet Chicken Paprikash, Beef Stroganoff Bake, Chicken Smothered in Peanut Sauce, Hot Spinach-Artichoke dip, Swedish Meatballs, Stuffed Shells Florentine, Chicken Kiev, and more...it's everything my family loves and I feel great serving it when I know it's healthy.

I would also recommend Betty Crocker's Best of Healhty and Hearty Cooking as well as The Complete Cooking Light Cookbook. I refer to these three cookbooks almost every night!

I've enjoyed a few recipes already and had the book for 3 days. The Artichoke Frittata was great tasting and reduced calories and fat minus cooking oil and using egg whites. Never missed them. Pumpkin-Nut Muffins substitued applesauce for oil and used a healthy cup of whole wheat flour slipped in for health, but didn't affect density or flavor. My only disappointment with the book is that many recipes use refrigerator dough and some prepared ingredients that I wouldn't necessarily call "Healthy". If you are concerned with partially hydrogenated oils, then you would not enjoy some recipes. Overall it looks like a keeper in my overflowing shelf of cookbooks.
