Makes 5 pints.
6 lbs fresh tomatoes (about 18 medium) or 6 cans (14.5 oz each) petite diced tomatoes.
1/4 cup granulated sugar.
1 pouch Mrs. Wages pasta sauce mix.
Wash fresh tomatoes. Scald 3 minutes in boiling water. Dip into cold water. Cut out cores, remove skins and puree to smooth consistency in blender or food processor. If using canned tomatoes, drain liquid.
Combine puree, sugar and pasta sauce mix in a large pot and bring to a boil. Stir occasionally. Reduce heat and simmer 25 minutes. Stir occasionally. Pasta sauce is ready!
Freeze it! Pour into freezer containers and let cool. Store in freezer up to 1 year.
Can it! 1) Pour hot sauce into clean, sterilized pint canning jars, leaving 1/2-inch head space. Cap each jar when filled. 2) Process 40 minutes* in boiling water bath. 3) Test jars for airtight seals according to manufacturer's directions. Store up to 1 year. If jars do not completely seal, refrigerate and consume within one week.
Serve it! Ready to use, or pour into containers and refrigerate up to 1 week.
Serving suggestion:
Brown and drain fat from 1/2 to 1lb of ground beef. Add 1 pint of prepared Mrs. Wages pasta sauce.
Simmer for 20 minutes and serve over cooked spaghetti.

I have made the Mrs. Wages Spaghetti Sauce (now called Pasta Sauce) in two ways. The first one is the way the package requires - and it makes a very nice sauce. Both my husband and I like it better than most of the ones available in the store.

The second time I made it, I added ground beef and used the pressure cooking method instead of the water bath. It made a wonderful treat to just be able to open a jar, heat it, and pour it over my spaghetti. It is always recommended that you cook low-acid items or meat products that have been canned for ten minutes - which is just the perfect amount of time for me to cook the spaghetti.

I can the mixture of meat and sauce in larger jars (quarts), but make the sauce itself in pint-size jars, since I am normally making only 2 servings.

***Note - before making the adjustments to the recipe, I went to my extension office and spoke with someone with professional experience, since canning is a precise balance of acid and cooking time to ensure safety.

I especially appreciate the Mrs. Wages recipes because she gives directions for both fresh tomatoes and canned options. Also, while the recipe calls for sugar, it is always an option to substitute Splenda for those who are diabetic.

I made some of this last year and was NOT impressed...the flavor was bad. Someone told me that they had a batch that was bad last year too, but that they usually love it...so this year I tried again. It doesn't smell good when cooking, and the taste is like it is burnt. I really wanted to like this...since the mix is in most of the stores near us and easy to find. I bought some of the Ball Jar Italian Style Pasta Sauce mix and it is wonderful. That is the only pasta sauce mix I will be purchasing from now on. For the record..Mrs. Wages pizza sauce is WONDERFUL (5 stars) and the Mrs. Wages hot salsa mix is 4 stars in my opinion. The Mrs. Wages salsa Medium, and the Ball Fiesta salsa are both 4 stars in my book as well (too much chili powder flavor for a 5 star...but both are good enough to make and store with our garden tomatoes).

I bought this and I was so upset when I realized that I ordered the Pasta Sauce accidentally instead of the Pizza Sauce! When I tried to return it, it said returns were not an option which left me really upset.

But I decided to look up the ingredients of the Pizza Sauce vs. the Pasta sauce. They both have the exact same 9 ingredients in the exact same order and the same nutritional facts! FOOD STARCH, SALT, MALTODEXTRIN, ONION, SPICE, PAPRIKA, BEET POWDER, CITRIC ACID, GARLIC.

I can now use this pasta sauce as a pizza sauce without feeling upset I ordered the wrong item. So I guess this item doubles as a pizza sauce as well!

I am so spoiled now! Won't be able to buy store bought sauce again! I have put up 21 pints of this sauce so far, 14 with meat and vegi's and 7 with just vegi's, pressure canning all 3 batches. I used a variety of fresh tomatoes from a local farm and did not use sugar (used a little truvia instead). This mix is amazing and rich. I was lucky to find any packages left locally because it is so popular!

I used the mix to make sauce to freeze (with fresh tomatoes). I was very impressed with the results. Because I freezed it I added several pounds of ground beef to the finished product before putting it in the containers. I plan on making it a second time, this time using canned tomatoes and maybe some vegetables (again I will be freezing so I am not concerned about the acidity).

This is the best tasting Pasta/Spaghetti sauce I have ever made. Used home grown tomatoes, and the flavor is just GREAT. Seasoning and Texture once mix was added is perfect. Most red sauces hurt my stomach, but this one doesn't. Will definitely continue using for future cannings.

A friend of mine introduced this to me this summer, and we liked it so well: we gave away all of our other store-bought pasta sauces. I have made it with Fresh garden tomatoes, as well as canned ones, and can't tell the difference.
