The Value of a Fully-Forged Knife
Mundial knives, with very few exceptions, are fully forged in a manufacturing process that combines innovative technology with old-world tradition and expertise. In the forging process, steel is heated to an extremely high temperature, set into a die, and hammered into the shape of the basic blade. Following a heating and cooling process, the forged blade is ground to create a full taper to the cutting edge. The result is a stronger, thicker, more resilient blade that flares smoothly at the heel to blend into the shape of the handle. Fully forged cutlery offers an array of key benefits, including greater tensile strength, increased durability, lasting sharpness, and better balance and control.

Construction
Mundial's computer-aided design creates the perfect shape and balance for chopping, dicing, and slicing all types of food. The knives are fully forged from high-carbon chrome molybdenum stainless steel for the best edge retention and sharpening ease. Each knife also undergoes Mundial's computerized blade grinding and polishing process to create a precise taper from tip to bolster (the quality bolster is the main feature of any truly forged knife). If you must have a forged knife in the kitchen you cannot go wrong with this. I'm a big fan of ten inch chef's knives. Most women and a lot of men would be better served using stamped blades but if you must have forged and your wrists are strong enough this is a serious knife that will do serious work in the kitchen. The steel is easily the quality of the high end euro knives I've used at 1/3 to 1/2 the price. The fit and finish is superb and the knife comes with a great edge and is relatively easily resharpened. There are some other knives out there with a higher profile but they will not function better or often as well as this knife, or any other Mundial, will. This knife, because of its length, can also double very well as a slicer. Great knife and a maker of other great knives.

I received an Amazon.com gift certificate for Christmas. For the past 20 years my main kitchen knife was a 6" German forged blade. It has been wonderful, easy to maintain and sharpen, but it just wasn't enough knife. I did a lot of research and decided that, for the money, Mundial was the way to go. And so I used the gift certificate from Amazon. I have had this knife for about a month now and I use it every day. I have always used one knife for everything, slicing, dicing, paring, you name it, my Chef's knife did the work. And so it remains with my 10" Mundial. The knife arrived razor sharp and I have not had to do anything to it yet. I will, I love knives and own more than a few. Sharpening knives is one of my hobbies and I use another gift, two Japanese whet stones, plus steel from Razor Edge to sharpen my knives. I highly recommend this knife, and it will most likely wind up being given by me for several holiday gifts at the end of 2011.

Gourmet magazine recommended this fine Brazilian knife. Only $24 for the plastic-handled one and about $42 for the nicer fused wood handle, but they are the same knife. I like the looks and feel of this wood handle--remember not to put it in the dishwasher, as you should treat all fine knives. The upper edge of the blade has quite sharp 90 degree corners, so you may want to do as I did--grind off the sharp corners and polish it more rounded to allow comfortable left hand pressure on the blade while cutting.
You can get them slightly cheaper at other sources, but there you have to pay shipping, so Amazon is the best bargain!
It is sharp and easily sharpenable, good thickness of steel for this sized blade.
A great knife for the price!

As a guy who has rebuilt his kitchen 3 times (starter kitchen, moved to the Philippines and built a kitchen, and now stocking my 3rd), Mundial came as a very pleasant surprise. I purchased this knife and their 5100 series santoku and in both cases the knife is incredibly easy to manage and maintain. As someone else mentioned, it are also very sharp. Not as sharp as my old Shun, but somehow it feels more robust. When you include the price as compared to other knives of similar quality this is a no-brainer must purchase for the all around knife.

The only possible complaint I can make is that the Mundial 5100 series doesn't have a Chinese chef's knife ..I got attached to them after living overseas.

If you want a high quality, sturdy, versatile knife without paying through the nose, this is the knife to get.

I love this 10" knife. It arrived fast and nicely packed with it's 8" brother. It's sharp and the weight I like it's weight because it's heavier than the Dexter's and Mercer's I picked up. There is one VERY painful problem I had with this 10" knife right out of the box. My first day with the knife I was given a case of chicken breast's to chop and dice (about 5 hours of constant chopping and cutting). I found out that the top edge of the bolster is cut at such a sharp angle that after 2 hours of chopping & dicing it made a previous blister worse (created by my Mundial 8" knife. See my Mundial 8" review). It's on my right index finger at the joint where the finger connects to my hand. My only choice was to take this knife to my electric bench grinder and completely round off the top left and right edges of the bolster so that it is no longer a sharp edge :-) NOW it is very comfortable to hold and I can cut and chop for hours and hours without pain and blisters. I am a happy customer now. But, If I could not have rounded off the bolster the knife would have been just a pretty show piece and useless to me.
