This line of books if you don't already know it is one of the best information learning lines available.

This book contains a great overview of the history behind instruments, how they are made and the scientific principles of sound production. Unfortunately, the human voice is not included and should be as it is also a wind instrument with sound production very similar to man-made instruments and yet has its own uniqueness.
